Abstract

The present invention is related to the conversion of mono-, di- and triglycerides containing cis unsaturated fatty acid residues to their corresponding geometrical trans isomers by free radicals. The process can be performed with glycerides, alone or with other components in mixtures, as well with the naturally available oils, in a variety of reaction media, such as in solution of organic solvents or in aqueous suspensions. A large variety of novel oils containing trans fatty acid residues can be obtained. The invention comprises the preparation of oils with a high trans fatty acid content, which may have useful properties for application as lubricating oils, and the preparation of a mixture of isomerized oils to be used as the analytical reference for trans geometrical isomers.
