Abstract
L'invention concerne un procédé de production de viande hachée consistant à réfrigérer la viande pré-traitée à une température comprise entre 0 et 2 °C, à transporter la viande jusqu'au point de vente, à une température comprise entre 0 et 5 °C, où la viande est stockée à une température comprise entre 0 et 4 °C et ensuite hachée dans l'appareil de production de viande qui est maintenu en permanence à une température comprise entre -2 et 4 °C. L'appareil de hachage de viande comporte un serpentin refroidissant (8) situé sur la surface extérieure de l'unité de traitement (3) et un dispositif d'alimentation (2). L'espace dans lequel est situé le serpentin refroidissant (8) est rempli de matière thermiquement isolante (9). La partie supérieure de l'appareil comporte une porte ouvrante (11) et un orifice de sortie (5) pourvu d'un capot de protection (13).
