Abstract

The invention relates to a method for making confectionery products, such as gum comfits, sweets and the like, either with or without filling, characterized in that said method comprises the step of forming a shaped string (4) of the confectionery product forming paste, and the step of shearing or cutting this string in a cross direction thereof, using a top-and bottom-chain (15, 16, 17). The system for making the method and the confectionery products made thereby also form an integrating part of the invention.

Description

METHOD AND SYSTEM FOR SHAPING OF CONFECTIONERY PRODUCTS WITH OR WITHOUT FILING
BACKGROUND OF THE INVENTION
The invention relates to a novel method for making confectionery products, such as gum comfits, sweets and the like, either including or not a filling.
The invention also relates to a system for carrying out said method and the confectionery products made thereby. The field of the invention is that of the systems used for making confectionery products comprising, for example, chewing gum comfits or sweets in general, which can also include a filling therein, or a syrup core or the like, held inside the comfit or sweet.
For making the above mentioned confectionery products laminating lines (the so called "Rolling and scoring machines") are conventionally used, in which a starting extruded paste is made, and processed, to provide a laminar construction having longitudinal and cross incisions or notches, therefrom the single comfits are then obtained.
A main drawback of the above mentioned prior systems is the impossibility of making filled comfits, since the individual comfits are obtained by a laminating operation, and by breaking the laminated construction in the above mentioned directions, i.e. the longitudinal and cross directions.
A further drawback of prior systems is the requirement of preliminarily laminating the confectionery product paste.
SUMMARY OF THE INVENTION
Accordingly, the aim of the present invention is to provide a novel system and method, specifically designed for making a confectionery product which, even if provided with a filling, has an overall comfit shape, i.e. a configuration like that of the gum comfits , also known with the name of "Chiclets".
The above mentioned aim, as well as yet other objects, are achieved by the method and system respectively according to the independent claims 1 and 6.
Preferred embodiments of the invention are shown in the remaining claims. With respect to prior systems, the inventive system and method provide mainly the advantage of making a confectionery product, such as a comfit or sweet, including an inner filling.
The invention provides the additional advantage that it can also be used for like products devoid of fillings, since it is suitable to make comfits and sweets in general, made of gum or any other desired food materials.
BRIEF DESCRIPTION OF THE DRAWINGS
The above mentioned aim and objects, as well as yet other objects, characteristics and advantages of the present invention will become more apparent hereinafter from the following detailed disclosure of a preferred embodiment of the invention being shown, by way of a non limitative example, in the figures of the accompanying drawings, where:
Figure 1 is a general view illustrating the overall system according to the invention;
Figure 2 illustrates the detail of the vertical string forming device used in the system shown in Figure 1;
Figure 3 is a cross-sectional view illustrating a pair of equalizer rollers for equalizing the vertical string of Figure 2;
Figure 4 is a front view illustrating the construction of the entraining or driving surface of the equalizer rollers shown in Figure 3;
Figure 5 illustrates the end forming roller assembly;
Figure 6 is a front view illustrating the comfit cutting and forming unit;
Figure 7 illustrates, on an enlarged view, a detail of the unit shown in Figure 6;
Figure 8 is a top plan view of the unit of Figure 6, seen from a string feeding side thereof; Figure 9 is a cross-sectional view illustrating the unit shown in Figure 6;
Figure 10 illustrates a detail of the outlet section of the unit shown in Figure 6 ; and
Figures 11a to lid illustrate the method steps of the method carried out by the system shown in the preceding figures. DESCRIPTION OF THE PREFERRED EMBODIMENTS
The system shown in Figure 1 comprises an extruder 1 for processing a confectionery product forming paste, such as a paste for forming a chewing gum comfit 2, either with or without sugar, having in its inside a core or filling 3 made of a different food material (for example a syrup or the like, as shown in Figure lid).
From said extruder 1 a string 4 is made, said string being formed by the comfit confectionary paste 25 having in its inside the filling 3 (Figure 11a).
Said string 4 is supplied to a vertical string processing unit 5, in turn including a plurality of top rollers 6 and bottom rollers 7, which are arranged aligned in a vertical direction (Figure
2).
More specifically, each said roller 7 is provided with a grooved surface 8, in which is partially engaged a corresponding portion of a top or upper roller 6, also provided with a groove 9 (see
Figure 3) .
At the connection portions of the grooves 8 and 9 of the respective rollers 7 and 6 is thereby defined a chamber 10 adapted to define the shape or cross configuration of the section of the string 4.
Both said grooves 8 and 9 of said rollers 6 and 7 are provided with notches or slots 11 (Figure 4) provided for entraining or driving said string 4 through the same roller pairs.
Thus, by operating the unit 5, the above mentioned string 4 is reduced in cross-section, to provide the end size of the desired end comfit.
At the outlet of the unit 5, the string 4 is transferred to the shaping or contouring unit 12, clearly shown in Figure 5. This unit is also formed by a top 13 and bottom 14 roller pairs, analogous to the disclosed rollers 6 and 7, the groove having however a smooth surface. Thus, on the string 4 at the outlet of the unit 12 are removed the marks left by the incisions or notches 11 of the rollers 6 and 7.
Downstream of the above disclosed unit 12, the system of Figure 1 comprises a cutting and forming or shaping unit 15, which is better shown in Figures 6 to 10. Said cutting and forming unit 15, in particular, comprises a top chain 16 and a bottom chain 17.
On the top chain 16 are moreover supported ejecting arms 18, which re slidably mounted inside respective supporting elements 19 in the direction of the chain 16 (Figure 8).
Said chains 16 and 17 are in turn provided with respective cutting elements 20 and 21 which define therebetween, as the chains are in a coupled relationship, the chambers 22 in which the comfits are definitely formed (Figure 7).
Said chains can perform a sliding movement in the direction of the arrows of Figure 6, thereby taking the string 4 from the inlet 23 and release, at the outlet 24, the comfits 2 as formed and cut inside said chambers 22.
The method carried out by the disclosed system is illustrated in Figures 11a to lid.
The string 4 exiting the extruder 1, formed by a confectionery paste 25 (for example of a chewing gum material, either with or without sugar, Figure 11a), having an inner filling 3 is processed by the string processing unit 5, thereby providing an oval or elliptical cross section string, having a cross section substantially equal to that of the end product, and having surface deformations 26, made by the notches 11 provided on said rollers 6 and 7 (Figure lib) .
Upon passing through the unit 12, the string 4 has a smooth surface (Figure lie) further formed inside the cutting and forming unit 15. The made end comfits 2 have the configuration and size of the chambers 22 defined between the chains 11 and 17.
Thus, the comfit 2 has a substantially quadrangular shape, in which two opposite size have been formed in the unit 12, whereas the remaining opposite sides are formed in the cutting and forming operation performed inside said chambers 22.
The invention, as disclosed and illustrated, can also be used for making comfits and sweets provided with an inner filling.

Claims

1. A method for making confectionery products such as gum comfits, sweets and the like, either with or without a filling, characterized in that said method comprises a step of forming a shaped string made of a paste forming said confectionery products and a further cutting step in which said string is cut in a cross direction thereof.
2. A method according to Claim 1, characterized in that said method comprises the step of preliminarily contouring said string, to provide said string with a substantially elliptical cross- section shape.
3. A method according to Claim 2, characterized in that said method comprises the further step of cross cutting, from said string, a plurality of confectionery products having a substantially quadrangular shape and rounded edges.
4. A method according to Claim 3 , characterized in that said method comprises the further step of forming, in said cross cutting step of said string, rounded edges on said confectionery product .
5. A method according to one or more of the preceding claims, characterized in that said method comprises a step of injecting a filling into said string.
6. A system for making confectionery products such as gum comfits, sweets and the like, either with or without a filling, characterized in that said system comprises means for forming and cross cutting a paste string, to cut from said paste string said confectionery products .

A system according to Claim 6, characterized in that said means comprises an extruder (1) for making a string (4) of the paste (25) forming said confectionery product, optionally integrated with a filling (3), a string processing unit (5) providing a first contouring operation on said string (4), an end contouring unit (12) for further contouring said string (4) and a cutting unit (15) for cutting said string (4) and forming said confectionery product.

A system according to Claim 7, characterized in that said string processing unit (5) comprises a plurality of top ( 6 ) and bottom ( 7 ) rollers, said rollers being vertically aligned, each said roller (7) being provided with a surface having a groove (8) in which is partially engaged a corresponding portion of a top roller (6) also provided with a groove (9), between said grooves (8, 9) being defined a chamber (10) defining the elliptical shape of the cross-section of said string (4).
9. A system according to Claim 8, characterized in that said system comprises means for making notches or slots (11) on the surface of said grooves (8, 9), to facilitate the driving of said string (4) between said roller pairs.

A system according to Claims 7 to 9, characterized in that said unit (12) for finally contouring said string (4) comprises at least a pair of top (13) and bottom (14) rollers provided with respective smooth-surface grooves and adapted to remove from said string (4) possible marks left by the notches or slots (11) of said rollers (6, 7).

A system according to one or more of Claims 7 to 10, characterized in that said cutting and forming unit (15) comprises a top chain (16) and bottom chain (17), in turn provided with respective cutting elements (20 and 21) defining therebetween, as said chains are coupled to one another, a plurality of chambers (22) in which said string is cross-cut and said confectionery products are definitely formed.
12. A system according to Claim 11, characterized in that said top chain (16) supports a plurality of ejecting arms (18) slidably mounted inside respective supporting elements (19).
13. A system according to the preceding claims, characterized in that said chains (16, 17) are driven one in a clockwise direction and the other in an anticlockwise direction.
14. A confectionery product, such a gum comfit, sweet or the like, either with or without a filling, characterized in that said confectionery product is made by the method and system according to one or more of the preceding Claims .
15. A confectionery product, according to Clam 14, characterized in that said confectionery product has a substantially quadrangular configuration, having a substantially elliptical cross-section and with rounded edges.
16. A confectionery product according to the preceding claims, characterized in that said confectionery product is a chewing gum of a "Chiclets" (R) type.
