Abstract

The invention relates to a method and device for optimizing the decomposition of starch during the process of raw materials containing starch into seasoning. The inventive method comprises the following steps: grains containing starch are suspended in water; the suspension is crushed and dispersed in an agglomerate breaker (15); the glumes thus present are detached from the grains; the grains are subdivided into smaller fragments, whereupon the cell walls of the fragments are at least partially opened and the dispersion is conducted into a collecting basin.
