Abstract

The invention concerns a recombined enzyme capable of being involved in exopolysaccharide biosynthesis by binding in the form of an isomer α or β between the carbon 1 bearing the aldehyde reduction function of an activated D-Galp and a lipophilic phosphate primer, in particular of the undecaprenol or protein type, particularly of the ACP type (Acyl Carrier Protein), so as to gradually ensure the formation of said exopolysaccharides including at each step the addition of a novel saccharide unit which is urged to be bound by its semi-acetal function to an alcoholic hydroxyl of another saccharide unit, which is at the end of a saccharide chain bound to said primer.
