Definitions

  • the present invention relates to improved dispensing of high viscosity materials, and particularly but not exclusively to improved methods and apparatus for dispensing fondant.
  • Fondant is essentially a very highly concentrated sugar solution which is highly viscous and generally considered non-fluid.
  • a ratio of approximately 80% sugar to 20% water, by weight, is the usual composition of fondant, although flavourings, colourants, preservatives and other additives may be added, albeit usually in relatively small amounts.

  • high viscosity material refers to materials such as fondant which are generally non-flowing at approximately working conditions, e.g. room temperature, and therefore cannot normally be satisfactorily dispensed through flow under the influence of gravity.
