Specification of Letters Patent.

To all whom it may concern:
Be it known that I, JAY N. Moore, a citizen of the United States of America, residing at t'jheboygan Falls, in the county of Sheboygan and State of Wisconsin, have invented new and useful Improvements in Curd-Knives, of which the following is a specification.
This invention relates to curd knives, and has for an object to provide a knife of this character in which a single length of wire is employed for forming the blades or cutting elements of the knife and to further provide a novel form of frame for supporting the blades or cutting elements and to so construct one element of the frame whereby the desired tension on the wire can be obtained.
In the drawings, forming a portion of this specification and in which like numerals of reference indicate similar parts in the several views Figure 1 is a plan view of my improved knife. Fig. 2 is a side elevation thereof. Fig. 3 is a detail longitudinal section taken on the line 3-3 of Fig. 1. Fig. 4 is a rear end view of the knife. Fig. 5 is a view similar to Fig. 1 showing a slightly modified form of my invention. Fig. 6 is a transverse section taken on the line 66 of Fig. 5. Fig. 7 is a side elevation of the knife.
In the form of my invention shown in Figs. 1 to 4 inclusive, the knife consists of a frame comprising end bars 1 and 2, side bars 3 and a movable tension member 4 which latter is formed to provide forked end portions 5 which are disposed in elongated recesses 6 in the said side bars 3. The end bar 2 or head member as it may be termed is formed with side flanges 7 which are secured by suitable fastening devices 8 to the longitudinal side bars 8, as shown particularly in Fig. 1 of the drawings. A. single strand of wire is employed for forming the longitudinal blades or cutting elements 9, and as illus trated, the terminals of the said wire which in the present instance form the outermost cutting blades are secured by means of fastening screws 10 to the movable tension member 4. The blades extend longitudinally of the frame of the structure and they are formed to provide looped ends 11 which extend over the end bar 1 and the said tension member 4. The wire forming the knives is so positioned on the frame of the structure that upper and lower series are formed, the knives of the upper series being disposed out of line with the knives of the lower series as fully illustrated in Fig. 4. In other words, the knives of the upper series are arranged immediately above the spaces between the knives of the lower series.
The tension member 4 carries an adjusting bolt 12 whose threaded end extends through the head member 2 and it has engaged therewith a clamping nut 18 which may be adjusted to move the tension member toward the said head member 2 as will be readily understood. The head member 2 is provided with a suitable operating handle 14, as illustrated. The upper series of knives are connected to the lower series by the connecting end portions 15 which are looped over the bar 1 and member 4 of the frame and when the said member 4 is moved toward the head 2 any desired tension on the knives can be obtained.
The side bars 3 are preferably formed with slots 16 which receive the tongue 17 of the end bar 1. In this manner the said bar forms the anchoring point for the wires forming the knives or cutting elements.
In the form of my invention shown in Figs. 5 to 7 inclusive of the drawings, the frame consists of a longitudinal side member 18 and a movable tension member 19 which is coextensive with the member 18 and which is spaced therefrom by a head 20. This head is similar to the head 2 in the preferred form of my invention and it is secured to the members 18 and 19 by suit- I able fastening devices 21. Brace bars 22 extend transversely of the frame and as shown, each bar is secured at one end to the member 18 and at its opposite end the bar is recessed as shown at 23 for receiving the movable tension member 19. The said movable tension member is provided with set screws 24 which are adapted to bear against the brace bars 22 and to be adjusted so that the member 19 will be positioned respectively to the member 18 to obtain the desired tension on the knives or cutting elements 24. The knives or cutting elements in this form of my invention are formed from a single length of wire whose terminal ends are suitably secured to the members 18 and 19 by fastenings 25. The wire is also formed to provide upper and lower series of blades but as illustrated, the blades in this form of my invention extend transversely to the frame of the structure while in the pre ferred form the blades extend longitudinally of the structure.
From the construction described it will be readily understood that the screws 24 may be operated so asto move the member 19 away from the member 18 to obtain the desired tension on the blades.
'1 claim 1. A knife of the character described comprising a frame having upper and lower series of flexible cutting elements, and a movable tension member operatively. connected with the cutting elements.
2. A knife of the class described comprising a frame having a flexible element wound therea'bout to present a plurality of spaced series of cutting elements, and a movable tension member operatively engaged with the said cutting elements.
3. A knife'of the class described comprising a frame having a single length of wire wound thereabout to present a plurality of series of cutting knives, and a movable tension member forming a portion of the frame and operable to obtain a tension on the Wire.
4. A cheese curd knife comprising a frame formed to provide a movable tension memher, and a single length of wire fixed at its terminals to the frame and having intermediate portions wound about the frame and wound about the said tension member and arranged to present a plurality of series of cutting knives.
