Letters Patent No. 74,864, dated February 25, 1868.
IMPROVED BREAD AND VEGBTABLEQGUTTER.

TO ALL WHOM IT MAY CONCERN:
Be it known that I, HIRAM A. '.lITUS, of Gloversville, in the county of' Fulton, and"State of NewYork, have invented anew and improved'Breadand Vegetable-Cutter; and I do hereby declare that the following is a full, clear', and `exact description of the same, which will enable others skilled in the art to make and use my invention, reference being had to the accompanying drawings, which forni part of this specification, in which- Figure 1 represents a front view of my invention.
Figure 2 is an end view of the same.
Similar letters of reference indicate corresponding parts.
This invention relates to a new breed and vegetable-cutter, which is so fitted,V at its twoends, in' a frame, that when it is drawn through the article to be cut, a combined drawing and'pressiug cut will be imparted to it.
The invention consists in securing one end of the knife to a lever, which is, at its lower end, pivoted to the frame of the apparatus and in arranging a segment, which is part of a circle, struck from the pivoting-point of the lever, as a guide for that end of the knife. The other end of the knife carries a roller or pin, which vfits through a slotted inclined arm of the frame. As the lever is turned around its pivot, the pin which connects it with the knife is drawnover the curve 'of the segment, while the other end of thel knife moves gradually down on an inclined plane in the inclined slot of the aforesaid arm.
A represents the-bed of the apparatus, near one edge of which the frame carrying the knife is arranged. This frame consistsof three pieces. B is a segmental plate, secured upon the bed A, near one end of the same, thel curve of the plate being on the outer sido. C is a slotted upright arm or guide, arranged near the inner end of the plate B, as shown in tig. 1. D is a slotted inclined bar or plate, secured to the-bed opposite to the parts B and Chut on the same edge of the bed as the same.
The knife or cutter E is, at one end, pirated, by'a pin, to a lever, F, the lower end of which is, vby a pin, b, pivoted to the plate B`at the point from which `the curve of the plate is struck. The pin a rests upon the curved edge of the plate B, and maybe surrounded by africtiou-roller to secure ease of operation.
, A handle, c, is formed on the upper end of the lever AF. That endiof the knife which is opposite to that y fastened to the lever is provided with a roller or pin, d, fitted into the slot of th'e arm D. When the knife is in its highest position, the lever F stands upright, or nearly so, as shown in tig. 1.
When the lever is moved in the direction of the arrow, (in fig. 1,) the'pin or roller t will be moved over the curve of the plate B, and a. proper pressure will thus` be applied to the knife, while the other eud ot the knife is," by the pin or roller (Z and inclinedrplate D, guided inv a slantiug direction, giving the knife a drawing cut. Thus, by this arrangement, the knife will receive the motion required to give a drawing cut and the proper degree of pressure. The pressure required will be much less than iftlie knife were forced directly in a fixed` plane through the article to be cut.
This invention is applicable for cutting bread, vegetables, fruits, or any other suitable 'nrticle. Having thus described my invention, I claim as new, and desire to secure by Letters Patent- Arranginrr the plates B and D in combination with the lever F and knife E, ull made and operating .so that the knife will receive a slauting motion and tberequired pressure, substantiallyas set forth.
