SPECIFICATION forming part of Letters Patent N o. 566,812, dated September 1, 1896.

To all whom it may concern:
Beit known that I, CHRISTIAN SoNNEsoN, a citizen of the United States, and a resident of Torrington, in the county of Litcheld and State of Connecticut, have inventeda certain nenT and useful Improvement in Vegetable- Parere, of which the following is a description.
This invention relates to an improvement in vegetable-parere.
The objects of the invention are to provide a vegetable-parer which shall be of great simplicity of construction, which may be constructed at but a slight expense, which in operation will rapidly remove the skin from potatoes or the like, and which may be adj usted so as to vary the depth of the cut.
With these objects in view the invention consists in the novel construction and combination of parts of a vegetable-cutter, as Will be hereinafter fully described and claimed.
In the accompanying drawings, forming a part of this specication, and in which like numerals of reference indicate corresponding parts, Figure l is a perspective view of the parer as it appears when ready for use. Fig. 2 is a similar view of the gage-arm detached from the blade. Fig. 3 is a rear elevation showing an adjusting-screw by means of which the gage-arm may be moved to or from the blade, so as to vary the depth of the cut of the latter. i Fig. 4 is an edge view showing more particularly the contour of the blade and of the gage-arm.
Referring to the drawings, l designates the blade, which is provided With a curved centrai portion 2 and straight end portions 3 and et, the end portion 3 being pointed, so as to admit of its being readily inserted in the vegetable 01 the like for the purpose of removing objectionable portions thereof, and the end portion 4 being straight and secured rigidly, in this instance, in a handle 5. The under side of the blade is left flat, and the upper surface is beveled to form the cutting edge G. Rigidly secured to the upper surface of the blade at a point contiguous to the handle is the gage-arm '7, which is provided with a shoulder 8, adapted to bear against the haft 9 of the blade to keep it at a proper distance therefrom, and a plate l0, through which passes an adj Listing-screw 11, a binding-screw l2, passin g through the haft and into the plate, serving to hold the arm at the proper adjustment. The plate carries a finger 13, which is curved to conform to the contour of the blade, and is adapted by means of adjustingscrews to be moved up and down, so as to regulate the depth of the cut of the blade.
In operation the knife is held upon the vegetable or the like to be pared, the curve in the blade conforming to the configuration of the article, and by using the device in the same manner as an ordinary knife the skin may be quickly removed. After the skin has been removed any objectionable portions ofv the vegetable or the like may be removed by the pointed end.

In a vegetable-parer, a blade having a curved central portion and straight end portions, one end of which is pointed, the upper surface of said blade being beveled and the under surface fiat, a gage-arm having the same contour as the blade and secured to the haft of said blade by means of an adjustingscrew which passes through a plate, said gagearm being provided with a shoulder adapted to bear against the blade to keep it at a predetermined distance therefrom, and a binding-screw passing the haft and into the plate to hold the gage-arm at the proper adjustment.
