Application filed April 18, 1922. Serial No. 555,267.
To all whom it may concern Be it known that I, HENRY GEHmNc, a citizen of the United States of America, and a resident of Cincinnati, in the county of Hamilton and State of Ohio, have invented a new and useful Improvement in a Slicing Knife, of which the following is a specification.
An object of my invention is to provide a slicing knife which may be readily used by any person regardless of whether or not he be lefthanded or right handed.
Another object of my invention is to pro vide a device of this kind in which the parts may be adjusted in relation to one another whereby to vary the thickness of the slices.
Another object of my invention is to provide a simple and efiicient device for the purposes as stated.
Another object of my invention is to pro vide a device, the parts of which may be readily assembled and disassociated whereby to effect thorough and ready cleansing and sterilization thereof.
These and other objects are obtained by means described herein and disclosed in the accompanying drawing, in which:

Fig. 3 is an enlarged sectional view on line 33 of Fig. 1.
My invention consists of a blade holder 1 having a shank 5 whereby same may be mounted on a suitable handle 6. The blade holder comprises spaced parallel arms 7 and 8 extending lengthwise of itself, whereby a substantially rectangular slot 9 is formed lengthwise of such holder. The forward end of the holder is preferably developed into a point 10 wherewith to remove the eyes from potatoes, etc.
The holder has formed in it the bores 11 and 12, said bores extending thru the holder in the same direction as does theslot 9, the axes of the bores 11 and 12 being in alignment with the longitudinal center line of the slot 9. The bores 11 and 12 are preferably circular, although they need not be so. A blade 13 has mounted at its opposite ends, pins 14 and 15, the pins being spaced from one another at a distance equal to the distance at which the bores 11 and 12 are spaced from one another. The pins are of a diameter such that they may be moved thru the bores 11 and 12. The free ends of the pins have a series of grooves 16 formed in them whereby there are formed a series of spaced annular flanges 17 on the free ends of the pins. Clips 18 and 19 are mounted on the holder, and are similar in shape, form and function. These clips comprise a body portion 20 and turned over edges 21 and 22 whereby the clips may be mounted on the holder and be slid or reciproeated thereupon. The clips have slots 23, the slots being formed in the body portion and being of a width intermediate the diameters of the reduced portions 2% formed on the pins and the flanges 17 formed on the pins. The opposite longitudinal edges of the blade are developed into cutting edges as shown at 25 in Fig. 3. A. rib 26 is formed on and extends longitudinally of the blade, and lies substantially midway of the cutting edges. When the blade is mounted in an operative position upon the holder, the ridge extends upwardly into the slot 9 formed in the holder, wherefore, when an article is being sliced, the slices are projected thru the slot Qdthereby precluding clogging of the cutting e ge;
The clips are used to secure the pins in various adjusted positions, the pins in turn spacing the blade at various distances from the holder, whereby the thickness of the slices may be varied. When the clips are disassociated from the pins, the entire cutting blade may be disassociated from the holder thereby permitting thorough cleaning of the holder and the blade. The clips in turn can be removed from the holder by being slid over the pointed end of the holder, thereby permitting cleaning of the clips. It should be observed that when the clips and the blade have been removed from the holder there is left on the holder no inaccessible places where any foreign matter may lodge.
What I claim is:
1. In a device of the class described the combination of a holder having a pair of bores, a blade having a cutting edge, pins mounted on the blade, the pins being adapted to be reciprocated in the bores whereby to space the cutting edge of the blade at various distances from the holder and having grooves formed in them, and clips slidably mounted on the holder adapted to engage in the grooves whereby to secure the pins against movement.
