IMPROVEMENT IN CULINARY STEAMERS.
Speciiication forming part of Letters Patent No. 121,558, dated December 5, 1871.
To all whom t may concern:
Be it known that I, CHARLES E. WAHLGREN, of Galesburg, county of Knox and State of Illinois, have invented certain Improvements in Oulinary Steamers, of which the following is a speciiication:
The nature of my invention relates to improvements in that class of culinary steamers in which the articles to be cooked are suspended in a retaining vessel over a surface of boiling water; and the invention consists in an inside cylindrical vessel provided with perforated and removable shelves for holding the articles to be cooked, arranged to operate with an outside cylindrical cap or cover for retaining the steam, said outside cylinder being provided with appliances for securing the inside cylinder in place, and for securing both in place in the vessel containing water from which the steam is generated.

A represents a cylindrical vessel open at both ends. B represents a fixed shelf in the vessel A, pierced with holes, as shown at Fig.' 3. Gis a l movable shelf, resting on lugs c c c, projecting' from the interior surface of cylinder A. C is a handle attached to the shelf C. The shelf C is perforated similar to the shelf B. D is a cylindrical cap or cover, closed at its upper end and tting loosely over the cylinder A, and provided with a ring-handle, d, by which it may be lifted. E E are turnlcatches, working in bearings c c on the cylinder D, their lower ends bent at right angles to form catches c c, and their upper ends bent in the same manner at right angles to the G G are spiral springs, their lower ends bent and passed up through their coils, and then secured by eyes to the eyes H H on the upper end ofthe cap or cylinder D. The operation of my invention is as follows: The articles to be cooked are placed on the perforated shelves B C; the cap D is then putin place over the vessel A and the catches E E turned to secure the cylinder A in place while the whole is lifted bythe handle d. Both cylinders may now he placed with their lower ends in any suitable vessel, J, containing Water, the surface of which is not up to the lower shelf when the lower ends ofthe cylinders are pressed to the bottoni thereof. The hooksz' t' may now be brought down and engaged with the rim, or with lugs or ears on the vessel J, holding the cylinders A 1) securely in position, while the steam arises and permeates through every part, cooking whatever may be contained in the cylinder A. The lower ends of the cylinders resting in the water, the steam arising therein strikes the articles on the shelves direct, without contact with outside air, the air in the cylinders becoming rareiied from the heat. Any number of movable shelves C may be used by providing lugs c for their support, the cylinder A being pierced with holes a c ct a inimediately below each shelf, through which the steam may pass to the shelves above when the perforations in a shelf below are obstructed. Vhen desired, the cap D may be released and lifted oli' of the vessel A, and the movable shelves C lifted therefrom with their contents.
What I claim isl. The cylinders A and D, constructed as described, and arranged to operate with the vessel J, substantially as described, and for the purpose specified.
2. The catches E E, springs G G, hooked rods I I, and handle d, when combined and arranged to operate with the cylinders A and D, substantially as described, and for the purpose specified.
