Abstract
Композиция для приготовления пива включает воду, измельченный солод, дрожжи низового брожения, экстракт хмеля и водный раствор расторопши. Способ производства пива включает приготовления затора, осахаривание затора, отделение сусла от дробины, кипячение сусла, сбраживание, дображивание. Перед кипячением сусла в него вводят расторопшу, плоды которой предварительно измельчают в дробилке, в которой расстояние между валками составляет до 2,5 мм, помол смешивают с водой, нагретой до температуры 70-150 °C, и кипятят в течение от 45 минут до 1,5 часа. Причем концентрация плодов расторопши составляет от 1 до 99% от объема сусла. Созданное пиво имеет оригинальные органолептические характеристики, высокую биологическую ценность.
