Abstract
本發明提供含有(i)選自由乙基-3-p-薄荷烷-3-羧醯胺乙酸酯及琥珀酸單薄荷腦酯所成之群的至少一種,以及(ii)選自由綠茶萃取物、胡椒薄荷萃取物、接骨木萃取物、鼠尾草、番石榴及聖羅勒萃取物所成之群的至少1種之糖果,其係兼具清涼感之持續性與良好風味的糖果。
Description
本發明係關於糖果,其可利用在食品、醫藥部外品或醫藥品領域。
屬糖果類別的製品中,藉由薄荷腦等感到「清涼感」或藉由酸味感到「爽快感」等之給予包含咽喉的口腔內之官能性要素係受到重視。 就給予「清涼感」方面,胡椒薄荷(peppermint)精油、薄荷精油的主要構成成分之l-薄荷腦是已知會帶來清涼感的物質。但是,l-薄荷腦係有具高揮發性並且不能持續清涼感的點或添加到飲食物中時會感到苦味的點等缺點。
於牙膏組成物摻合薄荷腦、胡椒薄荷油、薄荷油等,給與清涼感係已被廣泛進行,有許多市售產品摻合此等成分。又,強化清涼感或持續清涼感的探討有多數係在進行,已知含有薄荷腦類與各種冷感劑的毛髮及身體洗淨劑組成物具有優良之清涼效果及其持續性,組合薄荷腦類與各種冷感劑而具有冷感效果的香料組成物係被摻合於口腔組成物中(專利文獻1及2)。但是,此等技術清涼感持續性均不充分,抑制口腔用組成物中薄荷腦的苦味亦非可滿足者。 [先前技術文獻] [專利文獻]

[發明所欲解決之課題]
本發明的目的係提供兼具清涼感的持續性及良好風味的糖果。 [用以解決課題之手段]
本發明等人為了解決上述問題而深入探討的結果,發現藉由對冷涼成分之選自由乙基-3-p-薄荷烷-3-羧醯胺乙酸酯及琥珀酸單薄荷腦酯所成之群的至少一種,組合選自由綠茶萃取物、胡椒薄荷萃取物、接骨木萃取物、鼠尾草、番石榴及聖羅勒萃取物所成之群的至少一種,可調製兼具清涼感的持續性及良好風味的糖果。
藉由該見解所得之本發明態樣如下: (1)一種糖果,其含有 (i)選自由乙基-3-p-薄荷烷-3-羧醯胺乙酸酯及琥珀酸單薄荷腦酯所成之群的至少一種,以及 (ii)選自由綠茶萃取物、胡椒薄荷萃取物、接骨木萃取物、鼠尾草、番石榴及聖羅勒萃取物所成之群的至少1種。 (2)如(1)之糖果,其中成分(ii)為選自由綠茶萃取物及胡椒薄荷萃取物所成之群的至少1種。 (3)如(1)或(2)之糖果,其中成分(i)含有乙基-3-p-薄荷烷-3-羧醯胺乙酸酯及琥珀酸單薄荷腦酯。 (4)如(2)或(3)之糖果,其中成分(ii)含有綠茶萃取物及胡椒薄荷萃取物。 [發明之效果]
藉由本發明,可提供兼具清涼感的持續性及良好風味的糖果。
本發明中,「乙基-3-p-薄荷烷-3-羧醯胺乙酸酯」別名亦稱為WS-5,係可由例如Penta Manufacturing公司等購入市售品之冷涼感優良的化合物之一種,通常使用作為甜點類或清涼飲料等之添加劑的香料。 乙基-3-p-薄荷烷-3-羧醯胺乙酸酯的含量,相對於本發明之糖果總量,通常為0.00001~0.1W/W%,從本發明的效果面而言,0.0001~0.1W/W%較佳,0.001~0.1W/W%更佳,從亦包含不給予異味、異臭之觀點的總合觀點而言,更佳之含量為0.0001~0.01W/W%。當添加超過0.1W/W%的量時,因乙基-3-p-薄荷烷-3-羧醯胺乙酸酯引起令人不快的刺激味,而顯著降低服用感,故不佳。
本發明中,「琥珀酸單薄荷腦酯」,係可由例如東京化成工業等購入市售品之冷涼感優良的化合物之一種,通常使用作為甜點類或清涼飲料等添加劑的香料。 琥珀酸單薄荷腦酯的摻合量,相對於本發明之糖果總量,係0.0001~1W/W%,較佳為0.004~0.5W/W%,更佳為0.01~0.5W/W%。摻合量未達0.0001W/W%無法充分得到清涼感之持續性,超過1W/W%毋寧會抑制清涼感,阻礙香味表現,使用上不佳。
本發明中,「綠茶萃取物」,係可使用從例如Camellia屬(例如C. sinensis和C. assamica)的例如藪北(Yabukita)種或其等之雜種獲得的茶葉,將使其例如在40~140℃下加熱處理0.1分鐘~120小時的綠茶葉萃取液之濃縮物使用溶劑萃取或吸附劑等進行精製者。作為市售品例如亦可利用商品名「Purephenon」(小川香料(股)製造),商品名「Polyphenon」(東京Food Techno(股)製造),商品名「Theaflan」(伊藤園(股)製造),商品名 「Sunphenon」(太陽化學(股)製造)等。 綠茶萃取物的摻合量,相對於本發明糖果總量,係0.0001~10W/W%,較佳為0.01~5W/W%。摻合量10W/W%以上會展現強苦味,使用上不佳。
本發明中,「胡椒薄荷萃取物」,係可使用例如自屬唇形科(Lamiaceae)的胡椒薄荷(Mentha pipertia L. 別名西洋薄荷)的葉或全草,藉由水、二氧化碳或乙醇等有機溶劑進行萃取,或藉由水蒸氣蒸餾所得之胡椒薄荷萃取液之濃縮物,使用溶劑萃取或吸附劑等所精製者。作為市售品例如可利用商品名「Peppermint萃取液BG」(丸善製藥(股)),商品名「Mint Polyphenol」(小川香料(股))等。 胡椒薄荷萃取物的摻合量,相對於本發明之糖果總量,係0.0001~10W/W%,較佳為0.001~5W/W%,更佳為0.01~5W/W%。摻合量10W/W%以上時、苦味/澀味強,使用上不佳。
本發明中「接骨木萃取物」係由接骨木屬(Sambucus)植物之西洋接骨木的果實萃取/純化的萃取物或粉末,例如可利用市售品的「接骨木果實色素」(TRADEPIA(股)),「接骨木萃取物粉末」((股)Life Health Care)等。
本發明中「鼠尾草」係藉由將唇形科植物的鼠尾草的葉子或穗狀花序粉碎或萃取/純化而得到的粉末或萃取物,例如可利用市售品的「鼠尾草粉末(Sage Powder)」(S&B食品(股))、「鼠尾草乾燥萃取物」(ASK 藥品(股)))等。
本發明中「番石榴」係藉由將屬於桃金孃科(Myrtaceae)之植物的番石榴的葉子粉碎或萃取/純化而得到的粉末或萃取物,例如可利用「Guava Phenone」(備前化成 (股)),「番石榴之葉(粉末)」((股)P@life)等。
本發明中「聖羅勒萃取物」係藉由將屬於唇形科之植物聖羅勒的葉子萃取/純化而得到的萃取物或粉末,例如可利用「聖羅勒萃取物」、「Tulsi SCFE」((股)Sabinsa Japan Corporation),「Holy Basil extract」(Bio Activities Japan (股))等。 接骨木萃取物、鼠尾草、番石榴、聖羅勒萃取物的各摻合量,相對於本發明之糖果總量,係0.0001~10W/W%,較佳為0.001~5W/W%。當摻合量10W/W%以上時,苦味/澀味強,使用上不佳。
本發明之糖果之一實施態樣中,較佳含有選自由綠茶萃取物及胡椒薄荷萃取物所成之群的至少1種,特佳含有綠茶萃取物及胡椒薄荷萃取物。 本發明之糖果之別的實施態樣中,較佳含有乙基-3-p-薄荷烷-3-羧醯胺乙酸酯及琥珀酸單薄荷腦酯。 本發明之糖果進一步的實施態樣中,較佳含有乙基-3-p-薄荷烷-3-羧醯胺乙酸酯、琥珀酸單薄荷腦酯、綠茶萃取物。
本發明之「糖果」,係以糖、糖醇、水飴等為主原料之於口腔內溶解及咀嚼而服用的固體物,例如可列舉硬糖果、軟糖果、口含錠、錠型糖果、薄膜劑,但不限定於此,又,其製造方法、形狀及容器等之包裝形態亦不限定。又,糖果中,於上述成分以外,亦可在不損及本發明之效果的範圍內適當摻合糖類或糖醇類(砂糖、葡萄糖、果糖、異構化糖、還原水飴、麥芽糖醇、山梨醇、異麥芽糖醇、丁四醇、寡糖等)、鹽類(食鹽等)、甘味料(阿斯巴甜、乙鮮舒泛鉀(Acesulfame potassium)、蔗糖素、Advantame、紐甜、阿洛酮糖等)、酸味料(檸檬酸、蘋果酸、酒石酸、富馬酸、抗壞血酸、磷酸等)、香料、著色料、保存劑、礦物質類、維生素類、胺基酸及其鹽類、生藥、生藥萃取物、咖啡因、蜂王漿、食物纖維等,作為其他成分。 [實施例]
以下列舉實施例,比較例及試驗例,以更詳細地說明本發明,但是此等並未對本發明的範圍有任何限定。
將60g水添加至167g砂糖和167g水飴中,以常規方法加熱溶解並煮濃以製備300g糖糰。然後將各成分添加到糖糰中使成為表1~6記載的組成,藉由並成形、冷卻硬化以獲得硬糖(1個2.3g,1處方40個)。試吃所獲得的1個樣品,實施例1~9及比較例1~4係由4名品評員,又,實施例10~13及比較例5~10係由3名品評員使用VAS(Visual Analog Scale)方法評估含完10分鐘後的清涼感。亦即,橫向繪製的直線左端係為「感覺不到清涼感」,右端係為「非常感到清涼感」,測定距左端的距離來對清涼感的程度評分。計算出各個樣品的平均值後,算出以各個控制組(實施例1、2為比較例1;實施例3~5為比較例2;實施例6~8、10~13、比較例5~8為比較例3;實施例9為比較例4;比較例10為比較例9)之清涼感為1時的值。此外,實施例的胡椒薄荷萃取物係使用小川香料(股)的「Mint Polyphenol」,綠茶萃取物係使用小川香料(股)的「Purephenon」,接骨木萃取物係使用TRADEPIA(股)的「接骨木果實色素」,鼠尾草粉末係使用S&B食品(股)的「鼠尾草粉末(Sage Powder)」,番石榴粉末係使用(股)P@life之「番石榴之葉(粉末)」,聖羅勒萃取物係使用(股)Sabinsa Japan Corporation的「Tulsi SCFE」。又,比較例的黑醋栗萃取物係使用(股)明治Food Materia的「明治黑醋栗多酚(AC10)」,蜂蜜係使用日新蜂蜜(股)的「純粹匈牙利產金合歡蜜」,接骨木花萃取物係使用由(股)生活之木的「有機接骨木花」使用熱水萃取者,蜂膠萃取物係使用(股)FAP Japan的「超臨界萃取蜂膠萃取物粉末」。又,表中的「香料※」不包括乙基-3-p-薄荷烷-3-羧醯胺乙酸酯(WS-5)、N,2,3-三甲基-2-(1-甲基乙基)丁醯胺(WS-23)及琥珀酸單薄荷腦酯。
相對於比較例1,觀察到實施例1及實施例2在10分鐘後的清涼感較強。 相對於比較例2,觀察到實施例3及實施例4在10分鐘後的清涼感較強,實施例5觀察到清涼感更強。 相對於比較例3,實施例6、10~13在10分鐘後的清涼感較強,實施例7及實施例8觀察到清涼感更強。 相對於比較例4,觀察到實施例9在10分鐘後的清涼感較強。 實施例1至13中,與作為對照組的比較例1~4相比,在含完10分鐘後觀察到清涼感之持續性之提高效果。又,觀察到比較例5~8的素材、比較例10的冷涼成分中,並無在含完10分鐘後之清涼感之持續性之提高效果。 [產業上之可利用性]
依本發明,可提供兼具清涼感之持續性與良好風味的糖果。因此,藉由將本發明作為醫藥品、醫藥部外品及食品來提供,此等產業的發達係受到期待。

Claims (4)
- 一種糖果,其含有 (i)選自由乙基-3-p-薄荷烷-3-羧醯胺乙酸酯及琥珀酸單薄荷腦酯所成之群的至少一種,以及 (ii)選自由綠茶萃取物、胡椒薄荷萃取物、接骨木萃取物、鼠尾草、番石榴及聖羅勒萃取物所成之群的至少1種。
- 如請求項1之糖果,其中成分(ii)為選自由綠茶萃取物及胡椒薄荷萃取物所成之群的至少1種。
- 如請求項1或2之糖果,其中成分(i)含有乙基-3-p-薄荷烷-3-羧醯胺乙酸酯及琥珀酸單薄荷腦酯。
- 如請求項2或3之糖果,其中成分(ii)含有綠茶萃取物及胡椒薄荷萃取物。
