Abstract

Buluş, ağırlıkça en çok % 10 su içeriğine sahip şekil verilmiş lezzetli konsantre ürüne ilişkindir; söz konusu ürün, aşağıdakileri içerir: ? ağırlıkça % 50-95 partiküllü çeşni bileşenleri; ? ağırlıkça % 2-30 yağ; söz konusu yağ, 20°C'ta % 20'den az bir katı yağ içeriğine (N20) sahiptir; ? ağırlıkça % 2-20, ağırlıkça en az % 20'lik bir prolamin içeriğine ve 20 µm'den küçük küre eşdeğeri ortalama çapa sahip prolamin partikülleri. Buluşun sahipleri, beklenmedik şekilde, partiküllü çeşni bileşenleri ile birlikte önemli miktarda sıvı yağ içeren şekil verilmiş konsantre ürüne, prolamin içeren çok küçük partiküllerin dahil edilmesinin, sıvı yağın olumsuz etkisini etkili bir şekilde minimize ettiğini bulmuştur.
