Abstract

In a method and an installation for packing a carcass (2) prior to freezing, storage and/or transport, a bag-like plastic cover (6) is pulled from below over the hanging carcass (2) and sealed after evacuation of the enclosed air. The installation comprises an overhead conveyor (1) with suspension means (3) for each carcass for conveying the carcasses to an evacuation equipment (9-11) for a pulled-on plastic cover (6) and to a heating equipment (12) for heating the plastic cover after evacuation to a temperature at which the plastic cover permanently assumes the shape imparted to it by the evacuation, and the cover surfaces in contact with one another are blocked.
