Claims (1)

Способ сушки макаронных изделий, предусматривающих двухстадийное (предварительное и окончательное) удаление влаги из полуфабриката, отличающийся тем, что на начальном этапе первой стадии сушки в изолированной от окружающей среды рабочей камере сушильного агрегата путем принудительной циркуляции в ней подогретого до 65°С воздуха с влажностью, близкой к насыщению (к 100%), создают эффект бани и поддерживают его в течение 20 мин с момента начала сушки, затем влажность сушильного воздуха уменьшают до 80% и продолжают сушку в этом режиме до приобретения полуфабрикатом влажности 19 - 20%, после чего высушиваемую продукцию извлекают из рабочей камеры агрегата, герметично упаковывают в тару из гигроскопического материала и осуществляют окончательное досушивание ее до приобретения ею 13%-ной влажности в указанной таре в обычных условиях производственного помещения посредством поглощения гигроскопическим материалом соответствующего количества естественно выделяемой из упакованной продукции влаги.The method of drying pasta, providing two-stage (preliminary and final) removal of moisture from the semi-finished product, characterized in that at the initial stage of the first stage of drying in the working chamber of the drying unit isolated from the environment by forced circulation of air heated to 65 ° C with humidity, close to saturation (to 100%), create a bath effect and maintain it for 20 minutes from the moment of drying, then the humidity of the drying air is reduced to 80% and drying is continued in this mode until acquired semi-finished product with a moisture content of 19 - 20%, after which the dried products are removed from the working chamber of the unit, hermetically packed in a container of absorbent material and its final drying is carried out until it acquires 13% humidity in the indicated container under normal conditions of the production room by absorbing absorbent material appropriate amount of moisture naturally released from packaged products.
