Abstract

FIELD: food-processing industry, in particular, preparing of smoke products. SUBSTANCE: smoke generator has casing with water jacket, smoke-generating chamber with fire grate, hopper with doser, water-inertial cleaning chamber with discharge device and flues. Apparatus is further equipped with metal diaphragm heat-insulated from inside and provided with openings and centrifugal fan connected with flue through tangential branch pipe. Flues are composed of at least two shells positioned in spaced relation one within the other, with space between them defining inner flues. Upper edges of outer shells are choked and their lower edges are located in water-inertial cleaning chamber so that water seals are formed. Fine filter is mounted in inner shell. Nozzle fastened above fine filter is communicated through centrifugal pump with water-inertial cleaning chamber filled with water. EFFECT: increased efficiency by regulating parameters of smoke generation and product smoking processes and enhanced reliability in operation.

The smoke generator intended for the manufacture of smoked products contains a body with a water jacket, a smoke chamber with a grate, a hopper with a batcher, a water-inertia cleaning chamber with a drain device connected to a water jacket, chimneys. A thermally insulated diaphragm with holes and a centrifugal fan connected by a tangential nozzle to the chimney are introduced into the device, and the chimneys are made in the form of at least two shells, placed one in another with a gap forming internal chimneys, the upper edges of the outer shells are muffled, and their lower the edges are placed in a chamber of water inertia cleaning with the formation of water gates. In the inner shell of the chimney there is a fine filter, above which a nozzle is installed, connected through a centrifugal pump to water in the water-inertia treatment chamber. This design provides increased reliability in the work by increasing fire safety and plant performance by adjusting the parameters of the processes of smoke generation, smoke generation and smoking.
