Abstract

FIELD: food-processing industry, in particular, preparing of smoke products. SUBSTANCE: smoke generator has casing with water jacket, smoke-generating chamber with fire grate, hopper with doser, water-inertial cleaning chamber with discharge device and flues. Apparatus is further equipped with metal diaphragm heat-insulated from inside and provided with openings and centrifugal fan connected with flue through tangential branch pipe. Flues are composed of at least two shells positioned in spaced relation one within the other, with space between them defining inner flues. Upper edges of outer shells are choked and their lower edges are located in water-inertial cleaning chamber so that water seals are formed. Fine filter is mounted in inner shell. Nozzle fastened above fine filter is communicated through centrifugal pump with water-inertial cleaning chamber filled with water. EFFECT: increased efficiency by regulating parameters of smoke generation and product smoking processes and enhanced reliability in operation.

Claims (1)

Дымогенератор, предназначенный для изготовления копченой продукции, содержит корпус с водяной рубашкой, размещенную в нем камеру дымообразования с колосниковой решеткой, бункер с дозатором, соединенную с водяной рубашкой камеру водоинерционной очистки со сливным устройством, дымоходы. В устройство введены металлическая внутри теплоизолированная диафрагма с отверстиями и центробежный вентилятор, соединенный тангенциальным патрубком с дымоходом, а дымоходы выполнены в виде по крайней мере двух обечаек, размещенных одна в другой с зазором, образующим внутренние дымоходы, верхние края внешних обечаек заглушены, а их нижние края размещены в камере водоинерционной очистки с образованием водозатворов. Во внутренней обечайке дымохода размещен фильтр тонкой очистки, над которым установлена форсунка, соединенная через центробежный насос с водой в камере водоинерционной очистки.
