Claims (39)
1. Способ получения аэрированного молочного продукта, включающий стадии:
- получения и смешивания исходных компонентов, содержащих, по меньшей мере, один сахарид и/или сахарный спирт, выбранный из декстрозы, сорбита, глицерина, мальтита, эритрита, ксилита, маннита, лактита, лактулозы, галактоолигосахарида или любой их смеси,
- пастеризации смеси,
- охлаждения пастеризованной смеси с получением охлажденной смеси,
- проведения обработки смеси аэрированием с получением аэрированного молочного продукта,
причем способ не включает стадию гомогенизации.
2. Способ по п.1, дополнительно включающий, по меньшей мере, одну из стадий:
- созревания охлажденной смеси,
- упаковки аэрированного продукта,
- хранения продукта.
3. Способ по п.1, включающий стадии:
- получения и смешивания исходных компонентов, содержащих в дополнение к, по меньшей мере, одному сахариду и/или сахарному спирту, выбранному из декстрозы, сорбита, глицерина, мальтита, эритрита, ксилита, маннита, лактита, лактулозы, галактоолигосахарида или любой их смеси, воду, сливки, кварк и смесь эмульгаторов и загустителей,
- пастеризации смеси,
- охлаждения пастеризованной смеси с получением охлажденной смеси,
- проведения обработки смеси аэрированием с получением аэрированного молочного продукта,
- если требуется, созревания охлажденной смеси,
- упаковки аэрированного продукта,
- хранения продукта в морозильной камере,
причем способ не включает стадию гомогенизации.
4. Способ по п.1, в котором обработку аэрированием производят взбиванием с использованием фризера для мороженого, с использованием HPP-обработки или с использованием ультразвуковой обработки.
5. Способ по п.1, в котором смесь аэрируют с получением аэрированного молочного продукта, имеющего взбитость в диапазоне от около 20% до около 120%.
6. Способ по п.5, в котором взбитость находится в диапазоне от около 60% до около 120%.
7. Способ по п.2, в котором охлажденную смесь выдерживают в течение от около 1 до 4 часов.
8. Способ по любому из пп.2-7, в котором продукт хранят в холодильной камере, или в морозильной камере, или при температуре окружающей среды до 40°С.
9. Аэрированный молочный продукт, полученный по любому из пп.1-8.
10. Аэрированный молочный продукт, содержащий, по меньшей мере, один свежий молочный продукт, по меньшей мере, один сахарид и/или сахарный спирт, и смесь эмульгаторов и загустителей, и имеющий взбитость в диапазоне от около 20% до около 120%.
11. Аэрированный молочный продукт по п.10, в котором взбитость продукта находится в диапазоне от около 60% до около 120%.
12. Аэрированный молочный продукт по п.10 или 11, при этом продукт является кислым.
13. Аэрированный молочный продукт по п.12, при этом продукт содержит кварк.
14. Аэрированный молочный продукт по п.10, при этом продукт представляет собой замороженный продукт.
15. Способ получения премикса для аэрированного молочного продукта, включающий стадии:
- получения и смешивания исходных компонентов, содержащих, по меньшей мере, один сахарид и/или сахарный спирт, выбранный из декстрозы, сорбита, глицерина, мальтита, эритрита, ксилита, маннита, лактита, лактулозы, галактоолигосахарида или любой их смеси,
- пастеризации смеси,
- охлаждения пастеризованной смеси с получением охлажденного премикса,
- если требуется, созревания охлажденного премикса,
- если требуется, сушки премикса,
- хранения премикса,
причем способ не включает стадию гомогенизации.
16. Премикс для аэрированного молочного продукта, содержащий, по меньшей мере, один свежий молочный продукт, по меньшей мере, один сахарид и/или сахарный спирт, выбранный из декстрозы, сорбита, глицерина, мальтита, эритрита, ксилита, маннита, лактита, лактулозы, галактоолигосахарида или любой их смеси, и смесь эмульгаторов и загустителей.
