Abstract
1. Способ получения белкового гидролизата путем ферментативного гидролиза из белоксодержащего животного сырья, отличающийся тем, что сырье выбирают из ряда: туши сельскохозяйственных животных, или птицы, или рыб, белоксодержащие отходы при производстве продукции из сельскохозяйственных животных, или птицы, или рыб, предварительно измельченное до частиц размером 1-5 мм сырье помещают в реактор, разбавляют дистиллированной водой в соотношении от 1:2 до 1:3 и нагревают до 37-55°С, полученную реакционную смесь перемешивают, добавляют смесь протеолитических ферментов животного, растительного или микробиального происхождения, в течение 2-3 ч проводят гидролиз сырья при диапазоне рН от 2 до 7, раствор гидролизата сливают из реактора, подвергают дальнейшей очистке путем фильтрации, сепарирования и концентрирования для отделения твердого осадка и жира, после чего высушивают с применением низкотемпературной распылительной или сублимационной сушки с получением целевого продукта, содержащего не менее 90% массовой доли полноценного белка с аминокислотным скором от 90 до 105. ! 2. Способ по п.1, отличающийся тем, что не менее 90% целевого продукта - белкового гидролизата - составляют полипептиды с молекулярной массой от 15 до 200 кДа. ! 3. Бульон, обладающий профилактическими свойствами, характеризующийся тем, что содержит белковый гидролизат, полученный способом по любому из пп.1-2. ! 4. Бульон по п.3, отличающийся тем, что дополнительно содержит биологически активные вещества, выбранные из группы: концентраты и изоляты белков сыворотки молока и их гидролизаты, растительные белки и их гидролизаты, аскорбиновая кислота, растворимые пищевые1.
