Claims (20)
1. Аэрированная пищевая композиция, содержащая белок, масло и циклодекстрин в количестве, эффективном для обеспечения стабильного аэрированного пищевого материала.
2. Композиция по п.1, которая включает эмульсию типа "масло в воде".
3. Композиция по п.1, в которой циклодекстрин включает альфа-циклодекстрин.
4. Композиция по п.1, в которой молярное отношение циклодекстрина к маслу составляет по меньшей мере 0,65:1.
5. Композиция по п.1, в которой молярное отношение циклодекстрина к маслу составляет от 0,9:1 до около 4:1.
6. Композиция по п.1, которая включает молочный продукт.
7. Композиция по п.1, в которой молочный продукт выбран из группы, состоящей из взбитых сливок, сливочного сыра, мусса, йогурта и мороженого.
8. Композиция по п.1, в которой масло выбрано из группы, состоящей из глицерида, стерина и жироподобного вещества.
9. Композиция по п.1, в которой масло включает глицерид.
10. Композиция по п.9, в которой глицерид выбран из группы, состоящей из триацилглицерида, диацилглицерида и их комбинации.
11. Композиция по п.1, в которой масло выбрано из группы, состоящей из ненасыщенной жидкой жирной кислоты, жидкого глицерида с по меньшей мере одним остатком ненасыщенной жирной кислоты или их комбинации.
12. Стабильная аэрированная пищевая композиция, включающая эмульсию типа "масло в воде", содержащая от около 0,5 до около 5% белка, от около 2 до около 6,5% масла, от около 80 до около 97% воды (всего) и от 2 до около 15% циклодекстрина.
13. Композиция по п.12, в которой композиция содержит молярное отношение циклодекстрина к маслу, составляющее по меньшей мере 0,65:1.
14. Композиция по п.12, которая включает молочный продукт и имеет молярное отношение циклодекстрина к маслу, составляющее от около 0,9:1 до около 5:1.
15. Композиция по п.12, в которой молочный продукт выбран из группы, состоящей из взбитых сливок, сливочного сыра, мусса, йогурта и мороженого.
16. Композиция по п.12, в которой масло выбрано из группы, состоящей из глицерида, стерина и жироподобного вещества.
17. Композиция по п.12, в которой масло включает глицерид.
18. Композиция по п.12, в которой масло выбрано из группы, состоящей из ненасыщенной жидкой жирной кислоты, жидкого глицерида с по меньшей мере одним остатком ненасыщенной жирной кислоты или их комбинации.
19. Взбиваемая пищевая композиция, включающая эмульсию типа "масло в воде", содержащая белок, масло, воду и циклодекстрин в количестве, эффективном для получения стабильного аэрированного пищевого продукта.
20. Способ получения аэрированной пищевой композиции, предусматривающий включение газовых пузырьков в смесь, содержащую белок, масло и циклодекстрин в количестве, эффективном для получения стабильного аэрированного пищевого материала.
