Urządzenie ma korpus (1), emiter (2) światła, odbiornik (3) światła, sondę (4) o wydłużonym kształcie, na jednym końcu połączoną z korpusem (1) i zwężającą się na drugim końcu, czujnik (5) do pomiaru zagłębienia sondy (4) w mięsie i/lub tuszy, moduł (6) przetwarzający dane z odbiornika (3) światła oraz z czujnika (5) do pomiaru zagłębienia sondy w mięsie i/lub tuszy, światłowody (7) w postaci światłowodu lub światłowodów dostarczających światło z emitera (2) światła do miejsca (8) pomiaru i światłowodu dostarczającego światło z miejsca (8) pomiaru do odbiornika (3) światła. Urządzenie charakteryzuje się tym, że światłowód lub światłowody dostarczające światło z emitera (2) światła do miejsca (8) pomiaru mają większe sumaryczne pole przekroju niż światłowód dostarczający światło z miejsca (8) pomiaru do odbiornika (3) światła.
