Abstract

Linia technologiczna do formowania, prasowania i parzenia sera typu Halloumi, składająca się z zasobnika gęstwy twarogowej, wyposażonego w system do równomiernego jej rozłożenia, pod którym to zasobnikiem umieszczony jest szereg formująco-prasujących rur z zamontowanym na dole urządzeniem odcinającym uformowany twaróg, charakteryzuje się tym, że górna część formująco-prasujących rur (6) stanowiącej od 30% do 50% całkowitej wysokości wykonana jest z pełnego materiału, a pozostała dolna część jest perforowana, natomiast pod każdą formująco-prasującą rurą (6) zamontowany jest odcinający nóż (7) o ruchu posuwisto-zwrotnym poprzez pneumatyczny siłownik (8), a pod odcinającym nożem (7) w osi formująco-prasujących rur (6) umieszczony jest zespół ruchomych form (9), wewnątrz których znajdują się dociski porcjująco-prasujące (10) z regulowanym ciśnieniem w zakresie od 3 do 9 bar napędzane za pomocą elektrycznych servo-napędów (11), przy czym zespół ruchomych form (9) przemieszcza się przy pomocy siłownika pneumatycznego (12) na stanowisko wyładowcze (13) form (9), pod którym znajduje się metalowa taca (14) umieszczona na transporterze (15), na końcu którego znajduje się stanowisko sztaplowania (16) metalowych tac (14) w pionowe sztaple (17) i winda załadowcza (18) sztapli (17) do zamkniętego basenu (19) parzenia sera, który to basen (19) parzenia sera wyposażony jest w transporter wzdłużny (20) sztapli (17) i układ grzewczo-cyrkulacyjny (21) do ogrzewania wody w basenie (19), a na końcu transportera wzdłużnego (20) znajduje się winda wyładowcza (22) sztapli (17) z basenu (19) parzenia sera na stanowisko desztaplowania (23) tac (14) lub na wózek transportowy (24).The technological line for forming, pressing and steaming Halloumi cheese, consisting of a curd slurry container equipped with a system for its even distribution, under which a series of forming and pressing pipes with a device for cutting off the formed curd cheese mounted at the bottom are placed, is characterized in that the upper part of the forming and pressing pipes (6) constituting from 30% to 50% of the total height is made of solid material, and the remaining lower part is perforated, while under each forming and pressing pipe (6) a cutting knife (7) is mounted with a reciprocating movement via a pneumatic actuator (8), and under the cutting knife (7) in the axis of the forming and pressing pipes (6) there is a set of movable forms (9), inside which there are portioning and pressing clamps (10) with adjustable pressure in the range from 3 to 9 bar driven by electric actuators (9) servo-drives (11), wherein the set of movable moulds (9) is moved by means of a pneumatic actuator (12) to an unloading station (13) of moulds (9), under which there is a metal tray (14) placed on a conveyor (15), at the end of which there is a station for stacking (16) metal trays (14) into vertical stacks (17) and a loading elevator (18) for stacks (17) to a closed cheese-steaming basin (19), which cheese-steaming basin (19) is equipped with a longitudinal conveyor (20) for stacks (17) and a heating and circulation system (21) for heating water in the basin (19), and at the end of the longitudinal conveyor (20) there is an unloading elevator (22) for stacks (17) from the cheese-steaming basin (19) to a destacking station (23) of trays (14) or to a transport trolley (24).
