Description
도 2는 본 발명에 따른 버섯쿠키 제조방법이다.
도 3은 본 발명에 따라 제조한 버섯쿠키와 자연 건조시킨 버섯자실체와의 비교사진이다.
Claims (4)
- 버섯의 수분을 50 중량% 이하로 건조시켜 식염·당분수에 첨적시켜 간을 맞춰서 고압·고온으로 넓게 펴며 굽는 것을 특징으로 하는 버섯쿠키 제조방법.
- 제 1항에 있어서,
상기의 간을 맞추는 농도는 3% 식염·당분수로서 5% 고추냉이 또는 5% 강황 등 다양한 향신료를 첨가하여 맛을 가미하는 제조방법. - 제 1항에 있어서,
고압·고온 조건은 고압 1 kg/cm2,온도 150∼200℃의 조건으로 버섯을 넓게 펴며 굽는 제조방법. - 제 1항에 있어서,
버섯은 표고버섯, 느타리버섯, 동충하초, 노루궁뎅이버섯 등 고압 시 조직이 부서지지 않으면서 넓게 퍼지는 식용버섯.
