Claims (18)
- 천연 항균 및 항진균 성분을 포함하는 가공 치즈로서, 상기 가공 치즈는:
약 10 내지 약 90 퍼센트의 천연 치즈 또는 천연 치즈의 혼합물;
하나 또는 그 이상의 유화제(emulsifier);
약 8 내지 25 퍼센트의 단백질;
약 10 내지 30 퍼센트의 지방;
가공 치즈 중 그의 단백질 및 지방 수준에서, 마우스를 이용한 독소 바이오어세이(bioassay)에 의해 결정된 C.보툴리눔(C. botulinum)의 독소 형성을 86 ℉에서 약 9일 동안 방지하는데 효과적인 양의 니신(nisin); 및
약 0.5 내지 약 6 ppm 나타미신(natamycin)을 포함하는 것인 가공 치즈. - 청구항 1에 있어서, 상기 가공 치즈는 약 2 내지 약 6 ppm 나타미신을 포함하는 것인 가공 치즈.
- 청구항 1에 있어서, 상기 가공 치즈는 약 2 내지 약 5 ppm 나타미신을 포함하는 것인 가공 치즈.
- 청구항 1에 있어서, 상기 니신은 발효유 성분(cultured dairy component)의 형태로 가공 치즈 중 포함되어 있는 것인 가공 치즈.
- 청구항 1에 있어서, 상기 가공 치즈는 약 1 내지 약 100 ppm 니신을 포함하는 것인 가공 치즈.
- 청구항 1에 있어서, 상기 가공 치즈는 약 1 내지 약 20 퍼센트의 발효유 성분을 포함하는 것인 가공 치즈.
- 청구항 4에 있어서, 상기 발효유 성분은 락토코커스 락티스(Lactococcus lactis) 균주 ATCC PTA-120552 균주의 동정된 특징을 모두 갖는 분리된 락토코커스 락티스의 발효에 의해 제공된 것인 가공 치즈.
- 청구항 7에 있어서, 상기 세균 균주 ATCC PAT-120552의 발효는 약 15 내지 약 48시간 동안 약 25 내지 약 35 ℃의 온도 및 약 5 내지 약 6의 pH에서 3X 내지 5X 농축 액체유 배지(concentrated liquid dairy medium) 중 수행되는 것인 가공 치즈.
- 청구항 1에 있어서, 상기 가공 치즈는 소르브산, 소르브산 칼륨(potassium sorbate), 아질산염(nitrite), 및 이들의 혼합물로 이루어진 군으로부터 선택된 인공 방부제가 없는 것인 가공 치즈
- 청구항 1에 있어서, 상기 니신은 니신 A인 것인 가공 치즈.
- 천연 항균 및 항진균 성분을 포함하는 가공 치즈를 제조하는 방법으로서, 상기 방법은:
액체유 배지를 락토코커스 락티스 균주로 발효하여 니신을 포함하는 발효유 성분을 생산하는 단계;
천연 치즈 또는 하나 또는 그 이상의 유화제를 갖는 천연 치즈의 혼합물에 나타미신 및 상기 발효유 성분을 첨가하여 약 8 내지 약 25 퍼센트 단백질 및 약 10 내지 약 20 퍼센트 지방을 갖는 가공 치즈를 생산하는 단계를 포함하고;
상기 가공 치즈는 약 0.5 내지 약 6 ppm 나타미신 및, 가공 치즈 중 그의 단백질 및 지방 수준에서, 마우스를 이용한 독소 바이오어세이에 의해 결정된 C.보툴리눔의 독소 형성을 86 ℉에서 약 9일 동안 방지하는데 효과적인 양의 니신을 포함하는 것인 방법. - 청구항 11에 있어서, 상기 가공 치즈는 약 2 내지 약 6 ppm 나타미신을 포함하는 것인 방법.
- 청구항 11에 있어서, 상기 가공 치즈는 약 2 내지 약 5 ppm 나타미신을 포함하는 것인 방법.

- 청구항 11에 있어서, 상기 발효유 성분은 약 1 내지 약 100 ppm 니신을 포함하는 것인 방법.
- 청구항 11에 있어서, 상기 가공 치즈는 약 1 내지 약 20 퍼센트의 발효유 성분을 포함하는 것인 방법.
