Abstract
Description
Claims (15)
- 다음의 단계 a) 내지 단계 c)를 포함하는 식용 조성물 내 또는 식용 조성물 상 캡슐화된 활성 성분의 제조 방법
a) 선택적으로 가열 하에, 액체 활성 성분의 적어도 일부를 방출하도록 물
또는 물을 포함하는 식용 조성물에 다음의 i) 및 ii) 를 첨가하는 단계;
i) 물의 존재 하에 액체 활성 성분을 방출하는 고체 입자들, 및
ii) 빈 미생물 세포들을 포함하는 캡슐화 재료,
b) 액체 활성 성분의 적어도 일부가 캡슐화 재료 내에 캡슐화되도록 방출된
액체 활성 성분과 캡슐화 재료의 친밀한 접촉을 보장하기 위해 단계 a)
에서 수득한 조성물을 혼합 및 선택적으로 가열하는 단계;
c) 고체 입자들 및 캡슐화 재료를 단계 a)에서 단독 물에 첨가한 경우, 단계
a) 또는 단계 b)에서 수득한 조성물을 식용 조성물 내에 혼합하거나 이를
식용 조성물 상에 적용하는 단계. - 제 1항에 있어서, 상기 식용 조성물은 코팅 시럽 또는 반죽인 것을 특징으로 하는 방법.
- 제 1항에 있어서, 상기 식용 조성물은 도우(dough)인 것을 특징으로 하는 방법.
- 제 1항에 있어서, 상기 식용 조성물은 압출 가능한 것을 특징으로 하는 방법.
- 제 1항 내지 제 4항 중 어느 한 항에 있어서, 상기 캡슐화 재료는 빈 효모, 조류 또는 박테리아 세포들을 포함하는 것을 특징으로 하는 방법.
- 제 1항 내지 제 4항 중 어느 한 항에 있어서, 상기 빈 세포들은 매트릭스 성분과 결합되는 것을 특징으로 하는 방법.
- 제 1항 내지 제 6항 중 어느 한 항에 있어서, 수중 액체 활성 성분을 방출하는 상기 고체 입자들은 그 입자 내부에 액체 활성 성분이 흡착된 광물성 입자들, 활성 성분이 다당류 또는 하이드로겔의 고체 매트릭스 내로 캡슐화된 고체 입자들, 및 활성 성분을 포함하고 화학적으로 가교되지 않은 셸(shell)을 갖는 코어-셸 캡슐들 중에서 선택하는 것을 특징으로 하는 방법.
- 제 7항에 있어서, 수중 액체 활성 성분을 방출하는 상기 고체 입자들은 그 입자 내 또는 입자 상에 액체 활성 성분이 흡착된 광물성 입자들 및 그 입자 내에 활성 성분이 다당류들의 매트릭스 내로 캡슐화된 고체 입자들 중에서 선택하는 것을 특징으로 하는 방법.
- 제 7항 또는 제 8항에 있어서, 그 입자 내에 액체 활성 성분이 흡착된 상기 광물성 입자들은 실리카 입자들인 것을 특징으로 하는 방법.
- 제 1항 내지 제 9항 중 어느 한 항에 있어서, 상기 활성 성분은 풍미제인 것을 특징으로 하는 방법.
- 제 1항 내지 제 10항 중 어느 한 항에 있어서, 상기 활성 성분의 적어도 일부는 적어도 1.5의 logP를 갖는 것을 특징으로 하는 방법.
- 제 1항 내지 제 11항 중 어느 한 항에 있어서, 상기 단계 b)는 적어도 20℃의 온도에서 수행되는 것을 특징으로 하는 방법.
- 제 1항 내지 제 12항 중 어느 한 항의 방법으로 수득되는 캡슐화된 성분을 함유하는 식제품.
- 제 13항에 있어서, 츄잉-검 또는 프라이, 베이킹 또는 압출 제품의 형태인 것을 특징으로 하는 식제품.
- 제 13항에 있어서, 제 1항 내지 제 11항 중 어느 한 항의 방법으로 수득되는 시럽 또는 반죽으로 코팅된 츄잉-검 또는 프라이, 베이킹 또는 압출 제품의 형태인 것을 특징으로 하는 식제품.
