본 발명에 따른 캔디용 물엿은 당류의 종류 및 그 조성비가 일반 물엿과 다르게 조정되어 설탕, 또는 설탕 및 말티톨과 함께 사용되어 캔디를 제조하는 경우 캔디의 흡습성을 감소시켜 콜드플로우(cold folw) 현상을 억제하고, 캔디의 성형성을 양호하게 하여 작업성을 향상시키며, 캔디의 단맛, 치아부식성, 기호도 등과 같은 관능적인 특성을 향상시킨다. 또한, 고형분 전체 중량을 기준으로 솔비톨 4 중량% 이상을 포함하는 말티톨 시럽과 함께 사용하는 경우에도 캔디에 동일한 특성을 부여하기 때문에 솔비톨 2 중량% 이하를 포함하는 고가의 말티톨 시럽을 사용하는 일반적인 캔디 제조공정에 비해 캔디의 제조원가를 크게 절감시킬 수 있다.

Claims (11)
- 당류 전체 중량 기준으로 6탄당(hexose) 기반의 중합도가 1인 단당류(monosaccharide) 5 중량% 이하, 6탄당(hexose) 기반의 중합도가 2인 이당류(dissacchride) 35~40 중량%, 및 6탄당(hexose) 기반의 중합도가 3 이상인 다당류(polysaccharide) 55~60 중량%를 포함하는 캔디용 물엿.
- 제 1항에 있어서, 당류 전체 중량 기준으로 6탄당(hexose) 기반의 중합도가 1인 단당류(monosaccharide) 1~5 중량%, 6탄당(hexose) 기반의 중합도가 2인 이당류(dissacchride) 35~40 중량%, 6탄당(hexose) 기반의 중합도가 3인 삼당류(tirsaccharide) 30~35 중량%, 및 6탄당(hexose) 기반의 중합도가 4 이상인 다당류(polysaccharide)를 잔량으로 포함하는 것을 특징으로 하는 캔디용 물엿.
- 제 2항에 있어서, 상기 단당류는 글루코오스인 것을 특징으로 하는 캔디용 물엿.
- 제 2항에 있어서, 상기 이당류는 말토오스 또는 이소말토오스인 것을 특징으로 하는 캔디용 물엿.
- 제 2항에 있어서, 상기 삼당류는 말토트리오스 또는 이소말토트리오스인 것을 특징으로 하는 캔디용 물엿.
- 제 1항 내지 제 5항 중 어느 하나의 캔디용 물엿 및 설탕을 포함하는 캔디 제조용 조성물.
- 제 1항 내지 제 5항 중 어느 하나의 캔디용 물엿, 설탕, 및 말티톨 시럽을 포함하는 캔디 제조용 조성물.
- 제 7항에 있어서, 상기 말티톨 시럽은 말티톨 시럽의 고형분 전체 중량을 기준으로 솔비톨 4~20 중량%를 포함하는 것을 특징으로 하는 캔디 제조용 조성물.
- 제 6항의 캔디 제조용 조성물로부터 제조된 캔디.
- 제 7항의 캔디 제조용 조성물로부터 제조된 캔디.
- 제 8항의 캔디 제조용 조성물로부터 제조된 캔디.
