Claims (4)
- AGI 활성이 높은 고추품종으로부터 채취한 고추잎에 고추잎 중량 대비 30~80%에탄올을 2~ 4 배 가하고 12~24시간 진탕추출하여 그 상등액을 원심분리함으로써 AGI 고활성 고추잎 추출물을 얻는 단계와; 물에 불린 찹쌀을 마쇄하고 증자하여, 여기에 AGI 고활성 고추잎 추출물과 AGI 활성이 높은 고추품종으로부터 수확한 고추로부터 얻어진 고춧가루를 포함한 고추장혼합물을 투입하여 혼합하는 고추장 담금단계와; 상기 고추장을 일정시간 숙성시키는 숙성단계;를 포함하고, 상기한 담금 단계에서 고추장혼합물은 상기 AGI 고활성 고추잎 추출물에 가수하여 에탄올농도를 10~15%로 희석하여 고추장 총량 대비 중량비로 20~30% 가 포함되도록 한 것을 특징으로 하는 알파 글루코시다제 억제제 활성 고추장 제조방법
