Claims (12)
- 김치가 수용되는 본체(10)의 개방부위가 시트지(30)로 진공 밀폐되는 김치용 저장용기에 있어서,상기 본체(10)의 내벽면 사방 둘레에 각각 다수의 걸림돌기(11)를 종방향으로 돌출시키는 한편, 상기 본체(10)의 내측 평면적과 일치되는 평면적을 가지며, 상면 둘레 및 중앙에 다수의 통공(21')이 형성되는 밀착부(21a)와, 상기 밀착부(21a)의 둘레에 일체로 상향 절곡되며 본체(10)의 걸림돌기(11)가 끼워지는 걸림홈(22')이 외벽면 사방 둘레에 형성되는 고정부재(20)를 구비하여 상기 고정부재(20)의 밀착부(21a) 바닥을 본체(10)에 수용된 김치의 상면에 밀착시키되, 고정부재(20)의 걸림홈(22')을 본체(10)의 걸림돌기(11)에 단계적으로 끼워 이동중 저장용기가 일측으로 쏠리더라도 김치의 액즙이 밀착부(21a)의 통공(21')을 통해 고정부재(20)의 내측으로 유입되어 상기 고정부재(20)의 내측에서 자유롭게 순환됨과 동시에 액즙이 통공(21')을 통해 김치쪽으로 재공급 될 수 있도록 하며,이때, 상기 고정부재(20)는 지지부(22)를 외방으로 경사지게 형성하여 설치시 지지부(22)의 걸림홈(22')에 본체(10)의 걸림돌기(11)가 탄력적으로 결합될 수 있도록 하는 것을 특징으로 하는 발효 및 숙성기능이 보강된 김치용 저장용기.
- 제1항에 있어서,상기 고정부재(20)의 밀착부(21b)가 포기김치 등의 수용에 적합하도록 돔형태로 형성되는 것을 특징으로 하는 발효 및 숙성기능이 보강된 김치용 저장용기.
- 제1항에 있어서,상기 고정부재(20)는 이동중 김치의 유동이 제한 가능하도록 밀착부(21c)의 바닥 중앙에 반구형태의 누름구조가 형성되는 것을 특징으로 하는 발효 및 숙성기능이 보강된 김치용 저장용기.
- 삭제
- 제1항에 있어서,상기 밀착부(21a)의 상면 둘레에 형성되는 통공(21')은 상면 중앙에 형성되는 통공(21') 보다 촘촘히 형성하여 고정부재(20) 내부로 김치의 액즙이 신속히 유입될 수 있도록 하는 것을 특징으로 하는 발효 및 숙성기능이 보강된 김치용 저장용기.
- 제1항, 제2항, 제3항 및 제5항 중 어느 한 항에 있어서,본체(10)의 측면에 지시눈금(12)을 형성하여 본체(10)에 수용된 김치의 수용량을 외부에서 용이하게 파악할 수 있도록 하는 것을 특징으로 하는 발효 및 숙성기능이 보강된 김치용 저장용기.
- 제1항, 제2항, 제3항 및 제5항 중 어느 한 항의 발효 및 숙성기능이 보강된 김치용 저장용기를 이용한 김치 숙성방법.
- 제 7항에 있어서,상기 숙성방법은 상기 김치용 저장용기에 김치를 담아, 숙성기간 동안 상기 김치가 액즙에 항상 잠겨있도록 보관하는 것을 특징으로 하는 김치 숙성방법.
- 제 8항에 있어서,상기 김치 숙성 시 온도는 5~20℃인 것을 특징으로 하는 김치 숙성방법.
- 제1항, 제2항, 제3항 및 제5항 중 어느 한 항의 발효 및 숙성기능이 보강된 김치용 저장용기를 이용하여 제조된 김치.
- 제 10항에 있어서,상기 김치는 주재료인 배추 86 중량부를 기준으로 여기에 부재료인 멸치액젓 3~5 중량부, 고춧가루 2~4 중량부, 마늘 1~3 중량부, 설탕 1~3 중량부, 쪽파 0.5~1.5 중량부, 조미료 0.01~0.02 중량부 및 천일염 1~2 중량부를 혼합하여 제조되는 것을 특징으로 하는 김치.
- 제 10항에 있어서,상기 김치는 pH 3.5~5.0, 산도 0.3~0.9%, CO2 농도 1400~4100mg/kg, 락토바실러스 속(Lactobacillus sp.)균의 수 4.5×109~7.2×109cfu/㎖ 루코노스톡 속(Leuconostoc sp.)균의 수 5.0×109~1.1×1010cfu/㎖, GABA 함량 900~1600ppm 및 글루타민 함량 700~1300ppm인 것을 특징으로 하는 김치.
