Claims (8)
- 육질상(肉質相), 및 2개 이상의 분리된 겔상을 형성하고 각각 겔 용융 온도가 40℃ 이상 내지 150℃ 미만인 2종 이상의 겔화제를 포함하는 수성상으로 이루어지는 육제품.
- 제1항에 있어서, 육질상 및 수성상을 20:1 내지 1:10의 중량비로 포함하는 육제품.
- 제1항 또는 제2항에 있어서, 수성상이 0.1 내지 30 중량%의 겔하제를 포함하는 육제품.
- 제1항에 있어서, 겔화제로서 펙틴, 일긴산염, 한천, 푸셀레란, 겔란, 이오타-카라기난 및 카파-카라기난의 군에서 선택되는 겔화제외 배합된 전분을 포함하는 육제품.
- 제4항에 있어서, 알긴산염, 한천, 이오타-카라기난, 카파-카라기난 및 푸셀레란 또는 이들의 혼합물의 군에서 선택되는 다당류와 배합된 가수분해된 전분 또는 가교 전분으로 이루어지는 육제품.
- 제1항에 있어서, 수성상이 불투명한 육제품.
- 제1항에 있어서, 육질상이 소고기 또는 돼지고기로부터 유도된 육제품.
- 제1항에 있어서, 육질상이 가금류 또는 어류로부터 유도된 육제품.
