Abstract
PURPOSE: To improve the preserving effect of a food, and extend the scope of the food to be applied, by using a polyhydric alcohol ester of a fatty acid, acetic acid or fumaric acid and/or a salt thereof and a sequestering agent together.
CONSTITUTION: A preservative consisting of a polyhydric alcohol ester of a ≤10C fatty acid (formic acid, acetic acid, propionic acid, capric acid, etc. as the fatty acid and sorbitol, propylene glycol, glycerol, xylitol, etc. as the polyhydric alcohol) and acetic acid, fumaric acid and/or a salt thereof and acidic salt of an alkaline metal, e.g. alum, ammonium alumn or potassium hydrogentartrate, and a sequestering agent, e.g. metaphosphoric acid, pyrophosphoric acid, polyphosphoric acid or phytic acid, is incorporated in a marine or livestock paste product, Japanese-style confection and cakes, fermented foods, foods boiled down in soy, sauce, frozen foods, pickles, drinks, processed grains, etc. The amount of the preservative is 5% or less.
