Description
本出願は、2017年2月15日に仮出願されたセネガル国特許仮出願第62/459,215号の利益を主張し、参照によりその全体が本明細書において援用される。
本発明は、高い肉含有量を有する食用製造物の製造において使用することができる、高熱伝達2軸スクリュ加工装置(例えば、押出機)に広く関する。より詳細には、本発明は、加工中の材料の中に蒸気を直接注入する必要なしに非常に高い熱エネルギー入力を提供するそうした装置のみならず、その装置中の2軸スクリュに関する。これは、材料を加工する最中にそれを間接的に加熱する蒸気注入装置を備えた、独自の、中空コアの、高熱伝達スクリュ設計により得られる。
Claims (26)
- 食物の成分の混合物に使用される材料取入れ口、および加工済み材料取出し口と、前記加工済み材料取出し口に動作可能に結合された制限オリフィスダイ(orifice die)とを有する細長いバレル(barrel)と;
細長いシャフト中空中心コアを有する細長いシャフト、および前記細長いシャフトから外方に延びる細長いらせん状フライティング(flighting)をそれぞれが有し、前記細長いシャフト中空中心コアが、熱交換媒体を受容するように構成されている、前記細長いバレルの内部の一対の細長い、軸回転可能ならせん状スクリュであって、
駆動されて方向に関して共回転するように構成される当該らせん状スクリュと;
前記細長いバレルの外側のある点から、そしてそれぞれ、前記細長いシャフト中空中心コアの対応する一つの中に延びている一対の媒体送達管と、前記媒体送達管に結合されて、前記媒体送達管に媒体を導入して前記細長いシャフト中空中心コアの中への送達を可能にする構造と、を含む媒体送達組み立て体と、

- 当該フライティングの部分が、その長さに沿って内部のらせん状溝を有して、そして内壁を呈し、前記内壁を貫く一連の離間したアパーチャが、前記らせん状溝を前記中空コアと連通させる、請求項6に記載のシステム。
- 食物製造物を準備する方法であって、
食物の成分の混合物を、食物のプレコンディショナであって前記食物の成分の混合物を加熱して少なくとも部分的に下ごしらえしてプレコンディショニングされた製造物を作り出すように動作可能である前記食物のプレコンディショナの中に通過させるステップと、
前記プレコンディショニングされた製造物を、食物の押出機であって前記プレコンディショニングされた製造物をさらに調理するように動作可能である前記食物の押出機の中に通過させるステップであって、前記食物の押出機は、プレコンディショニングされた製造物の取入れ口、制限オリフィスダイを備えた押し出される製造物の取出し口を備えるバレルと、一対の細長い、軸回転可能なスクリュであって、その長さに沿って当該スクリュから外方に延びているらせん状フライティングを有する当該一対のスクリュとを備えるものであり、前記一対のスクリュが、前記バレル内にあって前記プレコンディショニングされた製造物の取入れ口から前記制限オリフィスダイに向けて、そしてそれを通じて前記プレコンディショニングされた製造物を移動させるように動作可能であり、
前記食物の成分の混合物が、穀物、でんぷん、脂肪、および肉を含み、
前記一対のスクリュがそれぞれ、中空コアを有し、前記らせん状フライティングの少なくともある部分が内部中空らせん状領域を有し、前記中空コアおよび前記内部中空らせん状領域がそれぞれ、その中に熱交換媒体を受容するように構成され、前記中空コアおよび当該フライティングの部分が互いに連通しており、
前記一対のスクリュのらせん状フライティングが、その長さに沿って全体的に噛み合っているものである、
前記プレコンディショニングされた製造物を前記食物の押出機の中に通過させるステップと、
前記プレコンディショニングされた製造物を前記食物の押出機の中に通過させるステップの最中に、前記一対のスクリュを方向に関して共回転させ、前記バレルの中に圧力を発生させるステップと、
を含む、方法。 - 前記食物の押出機の中に通過させるステップに先立って、前記食物の成分の混合物の少なくとも一部分をプレコンディショニングして、前記食物の成分の混合物を加熱し部分的に下ごしらえするステップを含む、請求項13に記載の方法。
- 前記肉が、前記食物の押出機の中に通過させるステップに先立って、35~50℃の温度に予熱される、請求項13に記載の方法。
- 前記中空コアおよび前記内部中空らせん状領域が互いに連通するものであり、前記熱交換媒体が前記中空コアの中に導かれるステップと、前記熱交換媒体を前記内部中空らせん状領域の中に通過させるステップとを含む導くステップを含む、請求項13に記載の方法。
- 前記中空コアおよび内部中空らせん状領域が、一連の離間したアパーチャを通じて連通し、これによって、前記中空コアの中に導かれる前記熱交換媒体が、前記アパーチャを通過して前記内部中空らせん状領域内に入る、請求項13に記載の方法。
- 前記一対のスクリュのそれぞれが、らせん状にフライト(flight)の付けられた取入れ区間であって、前記プレコンディショニングされた製造物の取入れ口から前記バレルの長さに沿って当該取入れ区間の端部まで延びている、当該取入れ区間と、らせん状にフライト(flight)の付けられた中心区間であって、前記取入れ区間の端部から前記バレルの長さに沿って当該中心区間の端部まで延びている、当該中心区間とを有し、前記中心区間が、前記取入れ区間のフライトの幅より広いフライトの幅を有し、前記取入れ区間および前記中心区間のらせん状のフライティングが同一の巻き方向である、請求項13に記載の方法。
- 前記食物の成分の混合物が、肉を含むものであり、前記肉が、乾燥成分の重量を100重量%としてこれを基準に、100~250重量%のレベルで、前記食物の成分の混合物中に存在する、請求項13に記載の方法。
- 前記食物の成分の混合物を前記食物のプレコンディショナの中に通過させるステップに先立って、前記肉が、35~50℃の温度に予熱される、請求項19に記載の方法。
- 前記プレコンディショニングされた製造物を前記食物の押出機の中に通過させるステップの最中に、前記一対のスクリュを30~150rpmの速度で回転させ、前記バレルの中に200~600psiの圧力を発生させて、そして熱交換媒体が、前記一対のスクリュの前記中空コアおよび前記内部中空らせん状領域の中に導かれる、請求項13に記載の方法。
- 加工装置のスクリュであって、
細長い、軸回転可能なシャフトであって、
中空コアを有し、前記スクリュを駆動部と結合するように動作可能な接続端部と、当該シャフトのもう一方の端部での軸受構造とを呈し、該端部に軸の穿孔を備えるものであり、当該穿孔を通ってそして前記中空コアの中に入る熱交換媒体送達管の挿入を可能にする前記軸の穿孔を備えた、当該シャフトと;
その長さに沿って前記シャフトから外方に延びる細長い、らせん状フライティングであって、
前記らせん状フライティングの少なくともある部分が、前記シャフトから外方に延びる一対の対向する離間した壁部分を有し、当該対向する壁部分どうしの間に中空らせん状領域を有し、
前記らせん状フライティングが、その長さに沿って前記壁部分の間に内部のらせん状溝を有し、上端が開口した外側溝および内壁を呈し、前記内壁を貫く一連の離間したアパーチャが、前記らせん状溝を前記中空コアと連通させ、前記アパーチャが、前記らせん状溝に沿って延びてその幅を超える長さを有する細長いスロットの形態を有するものである、
前記らせん状フライティングと、
前記内壁から離間した、前記上端が開口した外側溝を閉じる外壁と
を含む、スクリュ。 - 前記らせん状フライティングが、第1の区間と、より短い第2の区間とを含み、前記第1の区間と前記第2の区間とは、反対巻きとなっており、前記第2の区間が、前記第1の区間と前記軸受構造との間に位置し、前記第1の区間が、前記第2の区間の軸長より少なくとも3倍大きい軸長を有する、請求項22に記載のスクリュ。
- らせん状の前記第1の区間が、らせん状の前記第1の区間の径を基準にして0.4~1.2のピッチ長を有し、らせん状の前記第2の区間が、らせん状の前記第2の区間の径を基準にして0.2~1.1のピッチ長を有する、請求項23に記載のスクリュ。
- 前記細長いスロットの末端が丸みを有する、請求項22に記載のスクリュ。
- 加工装置のスクリュであって、
細長い、軸回転可能なシャフトであって、
中空コアを有し、前記スクリュを駆動部と結合するように動作可能な接続端部と、当該シャフトのもう一方の端部での軸受構造とを呈し、該端部に軸の穿孔を備えるものであり、当該穿孔を通ってそして前記中空コアの中に入る熱交換媒体送達管の挿入を可能にする前記軸の穿孔を備えた、当該シャフトと;
その長さに沿って前記シャフトから外方に延びる細長い、らせん状フライティングであって、
前記スクリュが、フライト(flight)の付けられた取入れ区間であって前記接続端部から当該取入れ区間の端部まで延びている、当該取入れ区間と、フライト(flight)の付けられた中心区間であって、前記取入れ区間の端部から前記軸受構造に向けて延びている、当該中心区間とを有し、前記軸の穿孔は、熱交換媒体が前記スクリュの前記取入れ区間を加熱しないように、前記取入れ区間の端部において実質的に終結しており、
当該らせん状フライティング区間の少なくともある部分が、前記シャフトから外方に延びている一対の対向する離間した壁部分を有し、当該対向する壁部分どうしの間に中空らせん状領域を有し、
当該フライティングが、その長さに沿って内部のらせん状溝を有して、上端が開口した外側溝および内壁を呈し、前記内壁を貫く一連の離間したアパーチャが、前記らせん状溝を前記中空コアと連通させるものである、
当該らせん状フライティングと、
前記内壁から離間した、前記上端が開口した外側溝を閉じる外壁と
を有する、スクリュ。
