効果=%Loss減少量=100*(Lc−Li)/Lc
式中、Lc=%Loss(比較サンプル)であり、Li=%Loss(本発明のサンプル)である。
油200gをエチルセルロースポリマー20gと混合した。混合物を300rpmにてプロペラミキサーでかき混ぜつつ165℃まで加熱した。次に100rpmにてかき混ぜつつ135℃まで急速に冷却し、次に20rpmにてかき混ぜつつ120℃までゆっくりと冷却した。高温の混合物をメタルブロックの穴へと注ぎ、室温に置き、制御されない方法で冷却した。100℃〜35℃間の冷却速度は1℃/分より速かった。
油200gをエチルセルロースポリマー20gと混合した。混合物を400rpmにてプロペラミキサーでかき混ぜつつ150℃まで加熱し、150℃で40分間保持した。次に混合物を75rpmにてかき混ぜつつ120℃までゆっくりと冷却した。高温の混合物をメタルブロックの穴へと注ぎ、室温に置き、制御冷却用の乾燥庫へ置いた。100℃から35℃まで下がる冷却速度は、約0.83℃/分から開始され、約0.1℃/分まで徐々に下降し、平均冷却速度は0.31℃/分であった。35℃で金属ブロックを乾燥庫から取り出し、室温(23℃)に到達させた。
比較実施例1の比較方法、及び調製実施例2の本発明の方法にて異なる3つの油を試験した。結果は以下の通りであった。
Claims (5)
- エチルセルロースポリマーと油との混合物を、0.6℃/分以下の速度で100℃から35℃まで冷却することを含む、エチルセルロースオレオゲルの製造方法。
- 前記冷却に先立って、
(a)軟化点が100℃以上であるエチルセルロースポリマーと油とを接触させて混合物を形成する工程と、
(b)前記軟化点以上の温度Tmixまで前記混合物を加熱する工程と、
(c)温度Tmixにて前記混合物を撹拌する工程と、
(d)100℃まで前記混合物を冷却する工程と、を更に含む、請求項1に記載の方法。 - 前記エチルセルロースポリマーのエトキシル置換含有量が47%〜50%である、請求項1に記載の方法。
- 前記油が食用油であり、前記食用油が植物から抽出された1種以上のトリグリセリドを含む、請求項1に記載の方法。
- 前記オレオゲルが界面活性剤を含まないか、または界面活性剤を、0.02:1以下の界面活性剤のエチルセルロースポリマーに対する重量比で含む、請求項1に記載の方法。
