本発明は各種食材を加熱処理するための処理装置とそれを用いた処理方法に関する。
特に過熱水蒸気を用いた加熱処理に係る。

トンネル部に容器を通過させる際に、食材の投入初期に食材に有する自由水を蒸発させるゾーン(予備処理ゾーン)、食材を加熱するゾーン(加熱ゾーン)、過熱水蒸気の温度を下げて食材を還元下で冷却するゾーン(冷却ゾーン)等、食材の特性が活かされるようにトンネル部を処理条件の異なる複数のゾーンに連続的に分けることができる。

本発明に係る処理装置の構造例を以下図面に基づいて説明する。
図1に構造を模式的に示し、図2にトンネル部の構造を示す。

このレールに沿って容器20を順送するための移送チェーン13と、この容器20に変動を加えるための変動チェーン14を張設してある。
移送チェーン13は、張設スプロケット13c及びガイドスプロケット13dにより張り巡らされ、伝達スプロケット13bを介して駆動部13aにより動く。
移送チェーン13には、図7に示すように爪部13e,13eが設けられていて、この爪部の間に容器の軸部24が納まるようになっていて、容器に回転や振動等の変動を与えながら移送させる。
図1〜7に示した実施例は、容器20をドラムとした例である。
変動チェーン14は、ドラム20を回転させるためのものであり、ガイドスプロケット14cにて張り巡らされ、伝達スプロケット14b及び駆動部14aにより動く。
変動チェーン14の溝部にドラム20に設けたスプロケット23が歯合しており、回転チェーン14の動きにより、ドラム20が回転する。

なお、トレイ型容器220を図11(b)に示すように両側に軸部124を設けると、振動を与えることなく移送することもできる。
