Description
水分含有率が46.0%の淡色系の米味噌300gに水150g(対味噌重量の50重量%)と調味料23g(グルタミン酸ナトリウム8g,鰹節粉末11.5g,酵母エキス粉末1.5g,核酸系調味料0.5g,昆布エキス粉末1.5g)を加え、これをゴムベラで均一に混合、分散させた。このペースト状調味味噌の水分含有率は60重量%であった。
実施例1と同様にして、水分含有率が46.0%の淡色系の米味噌300gに水163g(対味噌重量の54重量%)と、実施例1と同様の各種調味料を混合して、水分含有量62%のペースト状調味味噌を得た。
実施例1と同様にして、水分含有量60%のペースト状調味味噌を得た。
実施例1と同様にして、水分含有量60%のペースト状調味味噌を得た。次いで、予めブランチングしたキャベツ、長ネギ、絹さやの野菜と油揚げ、若布からなるみそ具材40gを図1の(E)に示すような底部が一辺35mmの略正方形で開口部が60mmの略正方形、高さ40mmのポリプロピレン製容器に充填し、これを0.5%のゼラチン液10mlを注加した後、冷凍庫で一旦凍結した。
Claims (2)
- 加水して混合した100ml以下の水分含有率が58〜67重量%の加水味噌を、截頭錐状の容器を上下逆転した形状で底部が狭く上部の開口部が広く、底部と側壁との角度が100〜130度であり、かつ側壁内周に底部から上部に至る複数本の溝を設けた成型容器に充填し、これを冷却して凍結乾燥の乾燥初期の減圧時に加水味噌が膨張できる程度に加水味噌を冷却硬化させた後、凍結乾燥することを特徴とする凍結乾燥ブロック状味噌の製造方法。
- 加水して混合した100ml以下の水分含有率が58〜67重量%の加水味噌と具材の中のいずれか一方を、截頭錐状の容器を上下逆転した形状で底部が狭く上部の開口部が広く、底部と側壁との角度が100〜130度であり、かつ側壁内周に底部から上部に至る複数本の溝を設けた成型容器に充填し、その上にいま一方の具材または加水して混合した加水味噌のいずれかを充填して具材と味噌とを重ねて複数層とし、これを冷却して凍結乾燥の乾燥初期の減圧時に加水味噌が膨張できる程度に加水味噌を冷却硬化させた後、凍結乾燥することを特徴とする凍結乾燥ブロック状味噌の製造方法。
