【発明の属する技術分野】
本発明は、食品成形装置、より詳しくは、パン生地、饅頭生地等の外皮材により、餡、調理した肉・野菜等の内材を確実に包み込み成形することができる食品成形装置に関するものである。

【従来の技術】
従来、パン生地、饅頭生地等の外皮材により餡、調理した肉・野菜等の内材を包み込む食品成形に関する技術としては、内材を棒状にしてその外側に外皮材を筒状にしたものを連続的に形成し、これをシャッタ機構の開閉動作により絞り込んで成形切断することが行われている(例えば実公昭63-29433号公報)。しかしながら、外皮材としてパン生地等の発酵性生地を用いる場合には、筒状形成する際に生地に過度な圧力や捻りなどが加わることから、成形切断後に生地が十分に膨らまなくなり、外皮材が弾力性に乏しい硬い食品になってしまう難点があり、その成形加工は人手で行っているのが現状である。こうした外皮材の筒状形成を避けてシート状の外皮材から食品成形を行う方法も提案されており、例えば、実公平7-18299号公報では、カップ内にパン生地と餡を供給し、封止ゲートにより餡を包むようにパン生地を封止する点が記載されている。

【発明が解決しようとする課題】
ところで、シート状の外皮材を用いて成形を行う場合、成形する食品の大きさによってシート状外皮材の大きさが異なったり、同じ大きさでも外皮材の形状にバラツキがあることを考慮する必要がある。これは、外皮材をシート状に形成するときには一対の回転ローラにて圧延することが一般的であるが、生地に柔軟性があることから、外皮材の形状を一定にすることが困難なためである。しかしながら、上述したシート状外皮材を用いた従来の食品成形方法では、こうした外皮材の形状の変化に十分に対応できない難点があった。

即ち、上記実公平7-18299号公報では、食品成形にカップを用いているため、その開口領域の大きさが予め決まっており、大きな製品を成形するために外皮材及び内材の量を多くすると、封止ゲートで封着する際に封止ゲートの上部から生地がはみ出してしまうおそれがある。生地支えの高さ調整機構を設けて製品の容積の大小に対応する点が記載されているが、カップ内での調整に限られるので、十分な調整ができるとは言えない。また、成形する製品の大きさに応じて大きいカップに替えることも考えられるが、量産工程において多品種の製品を生産する場合、いちいちカップを交換することは現実的でない。更にまた、外皮材をカップ周縁に戴置した後、封止ゲートで封着する際に、外皮材の形状にバラツキがあると、封止ゲートの上部から余分な生地がはみ出して分離し滓として残ってしまうことは避けられない。これはカップの開口領域の大きさが決まっているため、外皮材の形状にバラツキがあると、カップの開口縁に保持される外皮材の周縁部の幅が不揃いになり、幅が広い部分は封止ゲートで封止する際にゲート上部からはみ出してしまうからである。こうしてはみ出した生地は封止ゲートにより分離されて滓として、封止ゲートの上面に、または落下して装置内部に残ることになり、残った生地の滓は取り除かないと食品の中に入って不良品になってしまい、また、装置の中に入り込み故障の原因にもなる。こうした問題に対処するために予め生地片の形状を揃えることが考えられるが、そのための工程を追加しなければならないことから、製造時間が長くなると共に生地の受けるダメージも多くなってしまう。このように、カップ等を用いて成形することは、それによって制約を受けることになり、大きさ、形状及び特性の一定しない生地に柔軟に対応することができないのである。

本発明は、従来の食品成形技術に上記のような難点があったことに鑑みて為されたもので、外皮材の大きさ、厚み等の形状や柔軟性、粘着性等の特性が変化しても、これに簡単に対応することができ、確実に外皮材で内材を包み込み成形することができる食品成形装置を提供することを目的とする。

【課題を解決するための手段】
本発明に係る食品成形装置は、複数のシャッタ片から成るシャッタと、このシャッタの下方に配設され、複数の支持片により開閉可能な凹部を形成する支持手段と、内材が配置された外皮材を当該支持手段の凹部で支持した状態で、前記シャッタを閉じ動作させて内材を包むように外皮材の周縁部を封着するシャッタ駆動手段とを備えたことを特徴とする。また、前記シャッタが、少なくとも上下に二段配設されていることを特徴とする。また、外皮材を支持手段の凹部に押し込んで当該外皮材を椀状に形成する押込み手段を備えたことを特徴とする。また、前記押込み手段は内材を供給する内材供給手段を備えていることを特徴とする。また、外皮材の縁部を支持手段の支持片に保持する保持手段を備えたことを特徴とする。また、外皮材の縁部をシャッタのシャッタ片に保持する保持手段を備えたことを特徴とする。また、前記シャッタの開口領域において開口部を有する受け部材を設け、外皮材の縁部を当該受け部材に保持する保持手段を備えたことを特徴とする。

【発明の実施の形態】
以下、本発明を添付図面に示す第一実施形態及び第二実施形態に基づいて詳しく説明する。

[第一実施形態]
図1中、符号1で指示するものは、図2及び図3に示す計四枚のシャッタ片10・10…が組み合って開閉可能に構成されたシャッタである。なお、図2及び図3は図1の面Sにおける平面図であり、図2はシャッタ1が開いた状態を示し、図3はシャッタ1が閉じた状態を示している。このシャッタ1は、図1〜図4に示すように、駆動軸11・11…に固定された各シャッタ片10がこの駆動軸11を中心に往復揺動して各シャッタ片10の先端縁10aが隣のシャッタ片10の側面10bを摺動移動するように構成されており、これらシャッタ片10・10…の側面10bで囲んだ領域を開閉させる。

図1中、符号3で指示するものは、前記シャッタ1の上方に配設され、シート状の外皮材を椀状に形成するための押込み手段である。本実施形態の押込み手段3は、ステー31に固定された押込み部材30と、このステー31を上下動させる送りねじ機構32と、この送りねじ機構32を駆動するモータ33とから構成されており、このモータ33の回転方向、回転角度等を制御することにより押込み部材30を適宜に上下昇降させる。この押込み部材30を下降させてシャッタ1の開口部及び支持手段2の凹部25に進入させることによって、支持手段2の支持片20の上面に供給した外皮材の中央部を窪ませて外皮材を椀状に形成する。

また、本実施形態の押込み手段3は、椀状に形成した外皮材の内側に内材を供給する内材供給手段を備えている。即ち、本実施形態の押込み部材30は、下端に内材を吐出するための吐出孔を備えた筒体にて構成されており、この吐出孔を開閉するための弁40が内装されている。しかして、ホッパ45内へ投入した内材を、従来公知のポンプ44により供給パイプ43を通じて押込み部材30の筒内へ圧送し、そして、前記ステー31に固定されたエアシリンダ42の進退動作によりロッド41を介して弁40を上下動させることで吐出孔を適宜に開閉し、椀状形成した外皮材の内側に所要量の内材を供給し配置する。

図1中、符号5で指示するものは、前記シャッタ1の上方に配設され、外皮材の縁部を支持手段2の支持片20上に保持する保持手段である。この保持手段5は図9に示すように、押込み手段3の押込み部材30に固定され、複数の通孔を有するリング状のステー52と、このステー52の通孔に上下スライド可能に挿嵌され、上端にステー52に係止可能な頭部を備えた複数の支持ロッド51・51…と、この支持ロッド51・51…の下端に固定されたリング状の押え部材50と、この押え部材50とステー52との間において各支持ロッド51に被嵌され、押え部材50を下方へ付勢するコイルばね53とから構成されている。この押込み部材30を下降させることによって押え部材50で支持片20上の外皮材の縁部を押えて保持する。

図1中、符号6で指示するものは、前記支持手段2の下方に配設され、成形して得られた成形品を搬送する搬送手段である。この搬送手段6は、ラック−ピニオン機構62により支持ロッド61を介して適宜に上下動する支え部材60と、この支え部材60によりベルトが上下動されるベルトコンベヤ63とから構成されており、この支え部材60を適宜に上下動させて成形品をベルト上に戴置して搬送する。

以下、図9〜図17を参照しながら本実施形態の食品成形装置による食品包み込み成形工程について説明する。なお、本実施形態では外皮材Fとしてパン生地を使用し、内材Gとして餡を使用した例で説明する。

まず、図9に示すように、シャッタ1を開口させ、支持手段2を閉じた状態で支持手段2の支持片20上にシート状の外皮材Fを供給する。この外皮材Fは前述したようにばらついた形状をしている。支持片20上に外皮材Fを戴置した後、シャッタ1のシャッタ片10を閉じ方向に動作させてその開口面積を縮小させれば、縮小した開口状態に合わせて外皮材Fをセットすることができ、外皮材Fが所定位置に収まるように外皮材Fの位置調整を行うことができる。このことによって外皮材の形状のばらつきや位置ずれが予め修正され、より確実な成形処理を行うことが可能となる。

次に、図10に示すように、上方の押込み手段3の押込み部材30を下降させることによって保持手段5の押え部材50で外皮材Fの縁部を支持片20上で保持する。即ち、押込み部材30と共に保持手段5を下降させて押え部材50を外皮材Fの縁部に当接させ、この保持手段5をさらに下降させることによって押え部材50とステー52との間隔を狭めてコイルばね53を圧縮し、このコイルばね53の弾性力を利用して押え部材50を外皮材Fの縁部に押し付けて外皮材Fを支持片20上で押え保持する。

そして、図11に示すように、押え部材50で外皮材Fの縁部を保持した状態で、押込み部材30をさらに下降させることによって、押込み部材30を支持手段2の凹部25に進入させ、シート状の外皮材Fの中央部分を凹部25に押し込むことにより外皮材Fを椀状に形成する。このように本実施形態では、外皮材Fを椀状形成する際に、外皮材Fの縁部を保持手段5で保持するので、外皮材Fがパン生地等の弾性に富む食材であっても、外皮材Fの縁部周辺を伸ばしながら椀状に形成することができ、たとえ多少外皮材の形状・大きさがばらついていたり、位置ずれがあったとしても、外皮材を確実に椀状形成することができる。また、このとき、外皮材Fを支持手段2の凹部25が支持するので、外皮材Fが必要以上に下方へ伸びてしまうことを防ぐことができる。

次に、図12に示すように、押込み部材30を上昇させながら押込み部材30内の弁40を上昇させて吐出孔を開くことにより内材Gを吐出させ、椀状形成された外皮材Fの内側に内材Gを配置する。そして、所定量の内材Gが吐出された時点で弁40を下降させて吐出孔を閉じる。このように本実施形態では、押込み部材30を上昇させると同時にこの押込み部材30を通して内材Gを供給しているので、押込み部材30の上昇に伴ってパン生地から成る外皮材Fが収縮するのを防ぐことができると共に、外皮材Fの形状形成と内材Gの供給を短時間に効率良く行なうことが可能となる。また、このとき、外皮材Fを支持手段2の凹部25で支持しているので、内材Gの吐出による外皮材Fの必要以上の伸びを防ぐことができ、内材Gを確実に外皮材Fの内側に配置することができる。

次に、図13に示すように、押込み部材30をさらに上昇させて押え部材50を外皮材Fの縁部から離す。そして、図14に示すように、シャッタ1を閉じ動作させることにより支持手段2上の外皮材Fの周縁部を内材Gを包むように集め、集めた外皮材Fの周縁部を封着することにより外皮材Fで内材Gを包み込んだ成形品Hを得る。その後、図15に示すように、シャッタ1及び支持手段2を開いて成形品Hを下方の搬送手段6上に戴置して搬送手段6を下降させ、ベルトコンベヤ63を駆動させて成形品Hをベルト搬送する。

このように、本実施形態の食品成形装置にあっては、支持手段2の支持片20により形成される凹部25が開閉可能に構成されているので、この凹部25で椀状形成された外皮材Fの内側に内材Gを供給するとき(図12参照)、支持手段2の支持片20を開き動作させて凹部25を適度に開いた状態にすれば、図16に示すように、外皮材Fに対する内材Gの分量を増加させることができ、その後、そのまま外皮材Fで内材Gを包み込み成形することが可能となる。更にまた、シャッタ1で外皮材Fの周縁部を封着するときに(図13及び図14参照)、支持手段2の支持片20を開き動作させて凹部25を適度に開けば、図17に示すように、支持手段2の支持片20の上面にある外皮材Fの周縁部の量を減らした状態で外皮材Fを封着することが可能となる。したがって、カップの大きさが予め決まっていた従来装置のように比較的大きな成形品を成形するために、いちいちカップを交換する必要もなく、また、外皮材や内材の分量が多くなって、上部から外皮材や内材がはみ出してしまう惧れもないのである。

[第二実施形態]
第二実施形態の食品成形装置は、上述した第一実施形態における保持手段5を省略する一方、シャッタ1の上方に、このシャッタ1と同様な構成の複数のシャッタ片70・70…から成るシャッタ7を設けて上下二段式にシャッタ機構を配設した点に特徴がある。他の構成は第一実施形態と同様である。

図18〜図25を参照しながら、第二実施形態の食品成形装置による食品包み込み成形工程について説明する。なお、本実施形態では外皮材Fとしてパン生地を使用し、内材Gとして餡を使用した例で説明する。

まず、図18に示すように、上側シャッタ7及び下側シャッタ1を開口させた状態で、下側シャッタ1のシャッタ片10上にシート状の外皮材Fを供給する。ここでは、下側シャッタ1を外皮材Fが落下しない程度に開口させた状態で外皮材Fを供給しているが、下側シャッタ1を閉じた状態で外皮材Fを供給するようにしても良く、このことで、より安定的な外皮材Fの戴置が可能となる。また、下側シャッタ1のシャッタ片10上に外皮材Fを戴置した後、上側シャッタ7のシャッタ片70を閉じる方向に動作させその開口面積を縮小させれば、縮小した開口状態に合わせて外皮材Fをセットすることができ、外皮材Fが所定位置に収まるように外皮材Fの位置調整を行うことができる。このことで、外皮材の形状のばらつきや位置ずれが予め修正され、より確実な成形処理を行うことが可能となる。

次に、図19に示すように、下方の支持手段2を閉じた状態で、下側シャッタ1を支持手段2の凹部25に合わせるように開口させ、上方の押込み手段3を下降させることにより、押込み部材30を上側シャッタ7及び下側シャッタ1の開口領域に通して支持手段2の凹部25に進入させ、シート状外皮材Fの中央部分を凹部25に押し込むことによって外皮材Fを椀状に形成する。このとき、外皮材Fを支持手段2の凹部25が支持するので、外皮材Fが必要以上に下方へ伸びてしまうことを防ぐことができる。

次に、図20に示すように、押込み部材30を上昇させながら押込み部材30内の弁40を上昇させて吐出孔を開くことにより内材Gを吐出させ、椀状形成された外皮材Fの内側に内材Gを配置する。そして、所定量の内材Gが吐出された時点で弁40を下降させて吐出孔を閉じる。このように本実施形態においても、押込み部材30を上昇させると同時にこの押込み部材30を通して内材Gを供給しているので、押込み部材30の上昇に伴ってパン生地から成る外皮材Fが収縮するのを防ぐことができると共に、外皮材Fの形状形成と内材Gの供給を短時間に効率良く行なうことが可能となる。また、このとき、外皮材Fを支持手段2の凹部25で支持しているので、内材Gの吐出による外皮材Fの必要以上の伸びを防ぐことができ、内材Gを確実に外皮材Fの内側に配置することができる。なお、このように外皮材Fの内側に内材Gを供給するとき、支持手段2の支持片20を開き動作させて凹部25を適度に開けば、外皮材Fに対する内材Gの分量を増加させることができ、その後、そのまま外皮材Fで内材Gを包み込み成形することが可能であることは上述した第一実施形態と同様である。

次に、図21に示すように、押込み部材30をさらに上昇させてから、図22に示すように、上側シャッタ7を閉じ動作させて外皮材Fの周縁部を中央へ寄せ集め、そして、図23に示すように、下側シャッタ1を閉じ動作させて、寄せ集めた外皮材Fの周縁部を封着することにより外皮材Fで内材Gを包み込んだ成形品Hを得る。その後、図24に示すように、上側シャッタ7、下側シャッタ1、及び支持手段2を開いて成形品Hを下方の搬送手段6上に戴置して搬送手段6を下降させ、ベルトコンベヤ63を駆動させて成形品Hをベルト搬送する。

このように本実施形態においては、外皮材を椀状形成するとき、この外皮材をシャッタ1上に保持する保持手段を設けていないので、その分構成を簡素化することができ、食品成形工程の簡略化、スピード向上を図ることができる。また、本実施形態では、シャッタ機構を上下二段式に配設しているので、外皮材の形状等にばらつきがあったとしても、外皮材を二段階で寄せ集めて封着することが可能となり、より確実な食品の包み込み成形を行うことができる。更にまた、図22及び図23に示したように、上側シャッタ7を完全に閉じた後、下側シャッタ1を閉じるようにすれば、多少外皮材の分量が多くなっても、封着する際に外皮材や内材がシャッタの上部にはみ出して滓になる惧れもない。

また、本実施形態の食品成形装置にあっても、支持手段2の支持片20により形成される凹部25が開閉可能に構成されているので、シャッタで外皮材を寄せ集めるときに(図21及び図22参照)、この支持手段2の支持片20を開き動作させて凹部25を適度に開けば、図25に示すように、シャッタに対する外皮材Fの周縁部の特に高さ位置を調整することができ、その後のシャッタによる外皮材の寄せ集め量の調整を行うことが可能となる。したがって、上述した第一実施形態と同様、カップの大きさが予め決まっていた従来装置のように比較的大きな成形品を成形するために、いちいちカップを交換する必要もなく、また、外皮材や内材の分量が多くなって、上部から外皮材や内材がはみ出してしまう惧れもない。

以上、第一実施形態および第二実施形態をもって本発明の食品成形装置の具体例を説明したが、本発明はこれら実施形態に限定されるものではなく「特許請求の範囲」の記載内において種々の設計変更が可能である。

例えば、上記第二実施形態では、下側シャッタ1のシャッタ片10上に外皮材Fを戴置しているが、図26及び図27に示すように、上側シャッタ7と下側シャッタ1との間に外皮材Fを受ける薄板から成る受け部材8を挟み、この受け部材8の中央に円形の開口部80を開設しておけば、受け部材8上に外皮材Fをより安定的に戴置することができると共に(図26参照)、この受け部材8の開口部80に押込み部材30を進入させることにより、この開口部80を利用して外皮材Fを椀状形成することも可能となる(図27参照)。

また、上記実施形態では、シャッタ1・7として、駆動軸を中心に往復揺動する4枚のシャッタ片10・70を用いているが、外皮材を封着することが可能であれば、シャッタ片の枚数、形状は特に限定されることはない。例えば、図28に示すように6枚のシャッタ片15が互いに矢印方向へスライド直線移動することにより開閉動作するシャッタ機構を用いたり、図29及び図30に示すように、6枚のシャッタ片16が作用ピン17の矢印方向への回転運動に応じて直線運動しながら揺動することにより開閉動作するシャッタ機構を用いたり、各シャッタ片が連続回転して開閉動作するシャッタ機構を用いたり、種々のシャッタ機構を採用することができる。

また、上記実施形態では、開閉可能な凹部25を形成する支持手段2として、軸を中心に往復揺動する4枚の支持片20を用いているが、押込み手段3で外皮材を椀状に形成する際に、外皮材を支持することが可能であれば、支持片の枚数、形状、駆動機構は特に限定されることはなく、例えば、複数の支持片を中央方向へ直線往復運動させることにより凹部25を開閉させる構成にしても良い。

【発明の効果】
以上、説明したとおり、本発明に係る食品成形装置によれば、外皮材を支える支持手段の凹部が開閉可能に構成されているので、例えば、椀状形成された外皮材の内側に内材を供給するときに、この凹部を適度に開くことにより外皮材に対する内材の分量を増加させることが可能となり、また、シャッタで外皮材の周縁部を寄せ集めて封着するときに、この凹部を適度に開くことにより、支持手段の支持片の上面にある外皮材の周縁部の量を減らしたり、シャッタに対する外皮材Fの周縁部の位置を調整したりすることができ、その後のシャッタによる外皮材の寄せ集め量の調整を行うことが可能となる。したがって、カップの大きさが予め決まっていた従来装置のように比較的大きな成形品を成形するために、いちいちカップを交換する必要もなく、また、外皮材や内材の分量が多くなって上部から外皮材や内材がはみ出してしまう惧れもない。
