Description
空気混和した組成物は、当技術分野において既知である。空気混和は、軽いふわふわした質感などの望ましい特性を与えることができる。空気混和した生成物は物理的及び化学的不安定性の影響を受けやすく、したがって時間とともに不安定化する場合があることも当技術分野において既知である。空気混和したミルクをベースとする生成物におけるこのような不安定性の問題に対する1つの解決法は、空気混和前に、既に培養した乳製品に含水乳化剤を加えることを含む(例えば、米国特許第7,005,157号明細書(以下「’157特許」)を参照されたい)。具体的には、’157特許は、このような成分は、発酵時間などの処理問題に悪影響を与えることがあるため、発酵の前にその成分をミルクブレンドに直接加えないことを教示している。’157特許は、発酵後に含水乳化剤を添加することによって発酵時間の不利な延長が回避され、一方安定性に寄与すると教示している。凍結乾燥は、食品業界において周知の工程である。このように得られた生成物が消費者にとって重要な知覚特質を保持することは、空気混和した生成物をさらに乾燥させる際には重要である。’157特許において教示されている発明を使用して、凍結乾燥前の空気混和した生成物の水和は、物理的安定性にひどい悪影響を及ぼす場合がある。例えば、水和し空気混和した生成物は、凍結乾燥した場合、生成物の輸送及び取り扱いの間の脆弱性を増す結果となることがある。果物ピューレは、それらの糖含量のために凍結乾燥させることが困難である。果物ピューレは、水を保持するため、糖と水を分離させることは困難である。
本発明は、果物又は野菜成分と乳化剤とを含む、凍結乾燥し空気混和した果物又は野菜組成物、並びにその作製方法を含む。
全体を通して使用されるように、範囲は、範囲内のありとあらゆる値を記載するための省略表現として使用される。範囲内の任意の値は、範囲の終端として選択することができる。使用される場合、「の少なくとも1つ」という語句は、個々の任意の1つのメンバー又はメンバーの任意の組合せの選択を意味する。接続詞「及び」又は「又は」は、メンバーの一覧において使用することができるが、「の少なくとも1つ」という語句は、支配言語である。例えば、A、B、及びCの少なくとも1つは、A単独、B単独、C単独、A及びB、B及びC、A及びC、又はA及びB及びCの省略表現である。
本発明の最終生成物についての消費者の好みは、硬度、粘度及び溶解性などの物理的特性に基づいていると考えられる。各特性は重要である一方、3つの構成成分の間の正しいバランスは、本発明の最終生成物を最適化するために望ましい。粘度は、流れに対する物質の抵抗の測定値として定義される。粘度は、組成物を空気混和する前に、F−Tバーを有するヘリパス(登録商標)スタンドを備えたBrookfield粘度計を使用して測定する。粘度は、空気混和及び堆積の間の物質の形状の保持を助長する一方、硬度は、物理的安定性を助長すると考えられる。また硬度の測定値である溶解性は、乾燥から湿潤状態へと移行する生成物の硬度の変化である。溶解性を助長する空気混和の増加により、硬度が悪影響を受ける場合がある。本発明の組成物及び方法は、物理的に安定でかつ消費者に受け入れられる生成物を提供するための、粘度、硬度及び溶解性の間の最適なバランスを予想外に発見した。
凍結乾燥し空気混和した果物又は野菜生成物の調製方法は、(a)果物又は野菜ブレンドを用意するステップと、(b)乳化剤を加えるステップと、(c)果物又は野菜ブレンドを熱処理するステップと、(d)ブレンドを発酵させるステップと、(e)気体をブレンドと混合するステップと、(f)気体と果物又は野菜ブレンドとを同時に空気混和し、空気混和した生成物を形成させるステップと、(f)生成物を冷却するステップと、(g)生成物を凍結乾燥させるステップとを含む。ステップ(f)は、任意選択のステップとして含められる。
Claims (10)
- 果物又は野菜成分と、
乳化剤と、
増粘剤と
を含み、
低温殺菌されている、凍結乾燥し空気混和した果物又は野菜組成物。 - 前記乳化剤が、乳酸モノ及びジグリセリド、ポリソルベート、カゼイン塩、ホエイタンパク質、卵白タンパク質、並びにこれらの組合せからなる群から選択される、請求項1に記載の凍結乾燥した組成物。
- 前記乳化剤が、乳酸モノ及びジグリセリドである、請求項1に記載の凍結乾燥した組成物。
- ゲル化剤をさらに含み、前記ゲル化剤がゼラチンである、請求項1に記載の凍結乾燥した組成物。
- 前記果物又は野菜成分が、前記組成物の60%〜98%の量で存在する、請求項1に記載の凍結乾燥した組成物。
- 前記乳酸モノ及びジグリセリドが、前記組成物の0.001%〜1%の量で存在する、請求項1に記載の凍結乾燥した組成物。
- 前記増粘剤が、デンプン、親水コロイド(カラギーナン、グアーガム、イナゴマメガム、ペクチンなど)、及びこれらの組合せからなる群から選択される、請求項1に記載の凍結乾燥した組成物。
- 前記乳酸モノ及びジグリセリドが、モノ及びジグリセリドの乳酸エステル、モノ及びジグリセリドのクエン酸エステル、並びに蒸留モノグリセリドからなる群から選択される、請求項3に記載の凍結乾燥した組成物。
- 前記乳酸モノ及びジグリセリドが、モノグリセリドの乳酸エステルである、請求項3に記載の凍結乾燥した組成物。
- 少なくとも1種の糖をさらに含む、請求項1に記載の凍結乾燥した組成物。
