Abstract

Un mescolatore-agitatore per la lavorazione di miscele per pasticceria, gelateria e gastronomia comprendente una vasca (11), alla quale sono associati elementi di raffreddamento (12) e/o di riscaldamento (14), una parete esterna coibentata (15) ed almeno un elemento di mescolamento e/o raschiatura (25; 21, 22) disposto su un supporto rotante (19, 20). Nel mescolatore-agitatore l'elemento di mescolamento e/o raschiatura è costituito da una paletta (25), che è sagomata in forma di triangolo rettangolo, con cateti (30a, 30b; 31a, 31b), che individuano un bordo verticale ed un bordo orizzontale, che sono rivolti rispettivamente verso una parete laterale (16) ed un fondo (13) della vasca (11), che è incurvata e che, in sezione, ha la forma di una mezza luna.
