Abstract

The white cheese disclosed herein consists of 99% milk (70%-100% sheep milk and 0%-30% goat milk), 1% salt, rennet, lactic acid culture and added olive biophenols (0,1 to 0.25% of the milk in use) characterized by strong antioxidant/anti-inflammatory effects. Cheese characteristics: rectangular parallelepiped-shaped soft, brine preservable cheese. The invention relates also to a pilot method used to produce Hydroxytyrosol - enriched extracts from edible olive degreasing aqueous waste and olive leaf extract. Production stages: a) milk collection; b) milk transport; c) milk storage at 1-8 degrees Celsius and pH (6.5-6.8); d) cleaning by means of a separator; e) pasteurization at 74 degrees Celsius for at least 15 seconds; f) cooling at 33-37 degrees Celsius; g) addition of olive extracts and coagulation; h) curd division; i) molding and salting of the curd; j) overturning and draining of the molds; k) 1st maturation at 16-18 degrees Celsius to obtain humidity (56%) and pH less than 4.7; l) 2nd maturation at 2-4 degrees Celsius for 60 days in cold chambers.
