In a carving knife having a gauge bar for regulating the thickness of slices cut and adjustable for use in either hand, pegs 2 projecting from the blade 1 are slidably received in an aperture 5 in the gauze bar 3 and in an eccentric aperture 8, of equal size, in a journal 7 rotatable in an aperture 6 in the bar and having a radially projecting handle 9 which passes through a slot 10 in the bar and is turned to lock the blade in adjusted spaced relation to the bar. For use by a left-handed person the blade in the position shown in Fig. 2 is reversed end for end and secured at the opposite side of the bar.
