Abstract
559,301. Food preparations. GWATKIN, F. A. S. (Bruce's Juices, Inc.). June 9,1942, No. 7880 [Classes 14 (ii) and 49] Fruit or vegetable juice is obtained in the form of hard tablets by treating the juice with pectase to degrade pectin bodies, concentrating to about 70‹ Brix., adding calcium hydroxide or other acidneutralising agent, further concentrating to about 98‹ Brix. and casting the hot concentrated product into tablets. Commercial "Pectinol A" is a suitable pectase preparation. Dehydration is effected under vacuum, the final product being held under vacuum at an elevated temperature for about 30 minutes after water ceases appearing at the mouth of the condenser. Tablets of citrus fruit juice have a high vitamin C content and may contain 5-8 per cent of citric acid. Extracts of prunes or citrus peel and mixtures of fruit and vegetable juices, particularly orange and celery juices and turnip and grapefruit juices may be treated. In the latter case, the mixture should contain about 25 per cent of grape fruit juice and may be treated with diastase as well as "Pectinol A".
