Abstract

Poultry, dressing. -A device for preparing poultry for the table consists of a base member 1 slotted at 1A to receive a leg of the bird, a lever 3 pivoted on the base, a rotary member 2 journaled coaxially with the lever 3 and having an end 2B shaped to co-operate with the end of the lever to grip the leg, a spring 2D connecting the lever 3 and the member 2 to maintain the gripping pressure, the components being aranged so that when the lever is moved in one direction, the member 2 is checked by the stop 20 and the jaws 2B open against the spring pressure to allow the leg to be inserted, and, when the lever is moved in the opposite direction, the member 2 moves therewith, the shin bone of the bird being broken and the foot, with the sinews attached, being drawn away from the leg. The base is shaped to give the slot 1A an inclination which assists in positioning the leg.
