Abstract
1421623 Soy protein isolates GRAIN PROCESSING CORP 2 Feb 1973 5350/73 Heading C3H Soy protein is isolated by a process in which an aqueous dispersion of defalted soybean particles are subjected to reverse osmosis and there is subsequently recovered soy protein soluble at the soy protein isoelectric point together with soy protein insoluble at said isoelectric point. The preferred product is at least 75% by weight soluble in water, not more than 25% of the protein is denatured, the protein is capable of emulsifying at least 200 ml. of soy oil per gram thereof and a 7% by weight aqueous solution thereof does not gel when heated at 65‹ C. for at least 15 minutes.
