Abstract

Glucose.-In multiple-effect apparatus for concentrating grape juice under reduced pressure, different liquids are treated in each of the effects. The invention is particularly applicable to juices that have been treated with sulphurous acid, the juices being simultaneously concentrated to a boney and freed from sulphurous acid. Thus, white grape juice is concentrated in one effect at, say, 75‹ C. to produce a. honey for making jam, brandy, or liqueur wines, and other purposes where an alteration in the flavour and other characteristics is unobjectionable or desirable, while the juice of black grapes for use in making red wines is concentrated in the other effect at 55‹ C. or lower, 'in order to prevent coagulation of albumens and other changes. Acid potassium tartrate is separated in the course of evaporation. The plant consists of two effects, each comprising two evaporators, connexions being provided so that the plant can be operated as four evaporators in parallel or also as a triple or quadruple effect. Each of the two effects consists of tubular heaters D<1>, F<1> and separators E', G<1>. In each effect, the juice flows from a tank B<1> to the first evaporator D<1>, E<1> and thence through a cock e<1> to the second evaporator F<1>, G<1>, the honey being discharged through a barometric pipe 3 to a tank K'. To separate acid potassium tartrate, the juice is concentrated to 28-30‹ BÚ. in the first evaporator and is led by a pipe 4 to a tank L', where it is allowed to cool and deposit the tartar, the supernatant liquor being led to the second evaporator.
