Abstract
A shape-retaining nut foodstuff having good stability is prepared by a process in which nuts are comminuted and the contained oil is expressed and separated, after which an edible oil or fat is added to the nuts, which oil or fat has a higher melting point than the expressed oil. The product may be formed into discrete shapes, such as cubes, spheres, cylinders, or cones. The nuts, such as peanuts, may have been roasted. Stabilizers, inhibitors, and antioxidants may be added. Other materials, such as salt, sugar, dextrose, honey, corn or glucose syrup, milk solids, starches such as cornstarch or tapioca, gum arabic, gum tragacanth, locust bean gum, purified cellulose and cellulose derivatives, may also be added. The discrete shapes may be coated, for example with chocolate, edible lacs, sugars, gums, or milk solids.
