A baking oven comprises a baking chamber heated by repeated circulation of hot air, which enters the chamber through inlet openings in one side-wall, then flows, substantially horizontally, through spaces between vertically stacked baking plates supporting pieces of fermented dough, and leaves the chamber through outlet openings in an opposite side-wall. The baking plates may be stacked in a movable carriage. One or each side-wall, preferably the one having the inlet openings, comprises two flat plates, which are kept in face-to-face sliding contact. Each plate is pierced by a plurality of holes or slots arranged in patterns, which are identical on both plates. One plate can be slid relatively tothe other to bring the holes or slots in said one plate into complete or partial register with the holes or slots in the other plate, to vary the size of the resulting inlet and/or outlet openings. The baking oven shown in Fig. 1 has an outer casing 1 comprising inner and outer layers of sheet material with heat-insulating material 3 located between them. Two boxlike baking chambers 4 are enclosed in the casing. They are separated from the casing and from each other by spaces 8 and 18. Each chamber 4 has a top-wall 7 and two vertical side-walls 5 and 6, each comprising two plates, namely an outer fixed plate 9 and an inner movable plate 10, which are kept in contact by pins projecting from the plate 9 and passing through guide slots in the plate 10. The plates are pierced by holes 11, The two baking chambers are bridged by a perforated housing 16 on which two air-circulating fans 14 are mounted. The fans are driven by two electric motors 15 and circulate air through the spaces 8, the chamber 4 and the space 18. The air in the spaces 8 and 18 is heated by electric heaters 17.
