Abstract

A process for separating solid components from fats comprises heating the fat to a temperature at which it is substantially completely liquid; rapidly chilling the liquid product to produce a cloud of crystal nuclei; slowly cooling the nucleated product to a temperature at which the high melting components and a desired proportion of the intermediate melting components have crystallized; and thereafter separating the fat into substantially solid and substantially liquid components. In the example, hardened herring oil is heated to 120 DEG F. and passed through a scraped wall heat-exchanger where it was chilled to 85 DEG F. in 18 seconds, the chilled oil then being cooled to 60 DEG F. in a further 5 hours in a jacketed cooling vessel. The product was filtered under suction, the filter cake amounting to 55 wt. per cent of the product.
