Abstract
A foodstuff comprises edible artificial fibres, consisting of hollow fibres of spinnable material, being bonded to each other either directly or by means of an edible binder or packing material. The hollow fibres may be at least partly filled with edible material. Suitable materials for the fibres include plant or animal protein, polysaccharides, hard fats, soya protein, methyl cellulose, carboxymethyl cellulose, gelatine, sugar with or without glucose or a protein, doughs, and alginates. Suitable fillings include fats, oils, sugar solutions, syrups, alcoholic beverages, fruit and vegetable juices, vegetable purees, milk, yoghurt, malt extracts, vitamins, spices, and coffee. Suitable binders include egg albumen, alcoholic protein solutions, starch solutions, and gelaltine. Suitable packing materials include fatty substances, chocolate, and other foodstuffs which may be melted. In an example an artificial meat is prepared from fibres of soya protein and casein, filled with a degraded suspension of amylum solanis, bound by egg albumen, peanut butter, plant hydrolysate, sodium glutamate, and a dye.
