Abstract

L’invention est relative à un amidon thermiquement modifié produit par voie acide, caractérisé en ce qu’il présente un taux de citrate libre inférieur à 0,05 % et un taux de citrate fixé compris entre 0,05 et 0,15 %, une température au maximum de gonflement des grains d’amidon, analysée au RVA entre 2 et 17 minutes, supérieure à 140°C et/ou un volume de sédimentation compris entre 25 et 40 ml.
