Abstract

Procédé de fabrication d'une dispersion (5) comprenant des gouttes (17) d'une première phase (10), la dispersion comprenant en outre une deuxième phase (15) sensiblement immiscible avec la première phase et dans laquelle les gouttes sont dispersées, comprenant au moins les étapes suivantes : - écoulement d'un premier liquide (27) comprenant la première phase dans un premier conduit (43) ; - écoulement d'un deuxième liquide (31) comprenant la deuxième phase dans un deuxième conduit (45) entourant de manière concentrique le premier conduit ; le premier liquide comprenant en outre au moins un premier polymère et le deuxième liquide comprenant en outre au moins un deuxième polymère apte à réagir avec le premier polymère pour former une couche de coacervat, et/ou le premier liquide comprenant en outre au moins un agent gélifiant ; - obtention d'un jet liquide (23) en sortie du deuxième conduit dans une atmosphère gazeuse (64) ; - fragmentation du jet liquide dans l'atmosphère gazeuse et obtention de gouttes composites (24) comprenant une couche externe formée par le deuxième liquide ; - formation d'une écorce (19) par coacervation, et/ou gélification de la première phase par l'agent gélifiant; et - récupération des gouttes composites et obtention de la dispersion, la couche externe venant s'ajouter à la deuxième phase par coalescence.
