Abstract

The invention relates to a method for treating sugar beet. The inventive method consists in treating sugar beet or pieces of sugar beet with an electric field, followed by extraction and/or pressing. The method combines treatment of said sugar beet in mild conditions with a high sugar yield that contains a low amount of impurities.
